Can anyone share with me how they prepare pumpkins for pies- I would like to try but have never tried it...do you can or freeze, any spices,how to cook it? Please help me and let me know if it is worth my effort- Thank you dear friends!!

I just put up 2 pumpkins this week for holiday pies. I steam the pumpkins (sliced in half, seed removes, add a tiny bit of water and cover w/syran wrap poked with a couple of holes for venting) in the microwave until soft and then puree. I freeze in a ziploc bag. I remove and use as directed for the pie recipe. The taste is fresh and yummy!

I gut them, cut off the rind and cut it into smaller pieces. Put them in the oven to bake until tender enough to mash with a potatoe masher. Drain the water, mash and put 2 cups into freezer bags. Then whenever I want to bake a pie thaw and follow pie instructions. It helps if you use a variety of pumpkin specifically for pies/baking. Much better flavor and texture than a jack o latern variety.

Ooo! I've always wanted to try, but I thought you can only use small pumpkins, not the larger ones. Does it matter or make a difference? Lori, I can smell your pies here in PA, I'm sure they'll be delicious! ---Lisa

we bought some "pie pumpkins" at the farmers market...the house is smelling quite nice..and I'm pretty proud with what I have accomplished this morning.

Do you have to use a certain kind of pumpkin? I thought you were supposed to use the small ones, not the larger size.

I received some sugar pumpkin seeds and I've got about 8 of them waiting on me to take pics of my daughter with and then they'll be halved, hulled, baked, and pureed! If I have extras I'll save them till Thanksgiving and serve stuffing in them!
