Anyone care to share a "blue ribbon" chili recipe for camping?

I just read the activities for the campground we plan to camp at this weekend:

Fall Campout
Moonlight movie, rootbeer floats, canoeing, scarecrow making, hayrides, entertainment, a chili cook-off & marshmallow roast

FUN! FUN! FUN!

I have One!

Dutch Oven Chili

2 lbs. Ground Beef
1/2 lb. Bacon (cubed)
2 5.5 oz. cans Tomato Paste
2 large Yellow Onions (diced)
2 Tbs. Worcestershire sauce
3 cloves Garlic; (minced)
2 Tbs. Chili Powder
1 cup chopped celery (optional)
2 tsp. Paprika
2 tsp. Cumin
2 28 oz. cans Whole Tomatoes
3 16 oz. cans Red Kidney Beans (drained)

Fry bacon in a 12" Dutch oven using 22-24 briquettes bottom heat until crips. Add beef and brown, remove and drain. Set Aside.

To oven add onion, garlic, and celery and continue to saute until vegetables are soft.

Add beef, tomatoes, tomato paste, Worcestershire sauce, chili powder, paprika, and cumin.

Bring to a boil then cover and continue to cook using 8-10 briquettes bottom and 14-16 briquettes top for 25-30 minutes stirring occassionally to break up tomatoes.

Add kidney beans and cook 10-15 minutes longer to heat thru.

Serves: 8-12

Alternative method: Omit bacon and use Olive Oil instead.

Tara, I made your recipe. It was very good, had a wonderful thickness, aroma was just right, and color was perfect. However, there were 8 entries in the chili cookoff and we did not win. One that had velveeta (yucky-poo processed non-cheese) in it, and the other two had hot peppers in them, and watery to appearance, won the contest. After they served everyone, then they announced the winners. The funny thing was, is that my pot only had one serving left, while the other pots will pretty full. Dh said if we add cayenne and maybe a few other peppers we could win with that recipe next year. It was so much fun to make and participate in it. We were the only campers that made their chili on the campfire. All other entries were in crockpots and one on a stove top. I was pretty proud that we still used the campfire. It was just fun to do.

Kristi,
Sounds like you should have won . . .but I'll bet it was fun entering your chili.
Hope your campout was fun all over the place!

It was all for fun, and I hope to perfect our recipe. I even brought 2 canned jars of home canned tomatoes for ours.

I do want to make it again for the entire family. My hubby loves to cook over the fire too. We are working on an outdoor cooking ring for next summer. I'd love to cook outdoors due to the heat.

Oh....I have camping photos on my blog...and yes my youngest dd is wearing flannel pajama bottoms (ha ha!) She wore them all day Saturday.
