I love the flavor of Marzetti's House Italian salad dressing.
Reading the ingredients it lists, in order, soybean oil, water, red wine vinegar, extra virgin olive oil, salt, dried garlic, dried onion, spice, and then the preservatives, and emulsifiers etc.
I am wondering why I couldn't make this at home. I really like the peppery flavor of this dressing, so I am guessing that the "spice" is black pepper. I can't decide if other spices are used. Maybe a little paprika.
How would I figure out proportions to duplicate this dressing? Does anyone have a salad dressing recipe that uses red wine vinegar and olive oil mixed with salad oil? The dressing does not seem red at all, more of a greenish brown, so I am thinking that there must not be too much red wine vinegar in it.
What can I use as an emulsifier that won't spoil in the fridge for a few days?
