I'm looking for canned tomato sauce, and directions on canning tomatoes in water. I found one in the Ball book, but I'm not sure I have a big enough pot for 45 lbs of tomatoes. I have, right now, about 15 lbs of romas. I will have more tomorrow, so I'm looking for a recipe that calls for maybe 25-30 lbs. of romas for sauce (not spaghetti sauce).

I have a ton of ripe beef tomatoes and need to can them vs. freeze them. I've never canned them. I have no room in my freezer right now. I would love directions and tips on this.

Oh...and a recipe for BBQ sauce. I think I'd use that more often than taco sauce. Any recipes and/or directions on that too would be appreciated.

Why don't you just cut the recipe in half? I always use the ball recipe and have had great success.
