What's the easiest or best way to make blueberry syrup? I read that when it's canned, it's best to eat in the first 6 months, so is there a recipe to make it and not can it?
Hi Kristina. I make a blueberry syrup that I got from a small cookbook that I purchased at the place I picked the blueberries. Its a recipe booklet just for blueberries. I use it on my pancakes. Its a simple recipe but its not for canning. Just for fresh use.
Easy Blueberry Syrup
2 cups of fresh or frozen blueberries 3/4 cup of water 1 tabl. of cornstarch. I kinda of round it off 1/2 cup sugar. 1 tabl. of lemon juice
Put the first 4 ingredients in a saucepan and heat it up and stir until its bubbly. Make sure you stir it constantly wants it starts to heat up so it doesn't scorch and then turn down the heat until its barely bubbling. After its thickened then turn the burner off and add the lemon juice and mix in. Thats it and its done.Hope this helps.

Kristina, I, by mistake made blueberry syrup last year. Mix equal amounts of sugar and blueberries in large s/s pot. Cook on low/med heat about 1 1/2 hour. Squeeze fresh lemon juice. Skim off foam and ladle into hot jars and seal. Water bath can for 20 min. Like I said I made my last year and just used some last week for a smoothie and it was still delicious.
