You can bake this in a cast iron pan and bake it in the oven, however I baked mine in a quiche dish.
Every summer we love to take whatever is ripe and make Frittatas.
Here is what we baked yesterday:
Kohlrabi Frittata 2 medium Kohlrabi, peeled and diced small 1 small onion, diced 1 or 2 cloves of minced garlic (or how much you prefer) 1 green pepper, diced 1 small zucchini handful of cherry tomatoes - halved or smaller (it's just what we had in the garden at the time) 6-7 fresh eggs Parmesan cheese, fresh
In a medium skillet or cast iron pan, heat a bit of olive oil on med. heat, and cook kohlrabi, onion and garlic. Cook until kohlrabi is tender.
Add green pepper and cook another few minutes.
Add zucchini and tomato and cook until heated through.
Cook in oven safe skillet, or pour veggies into an oiled quiche dish.
Pour in about fresh, scrambled eggs.
Bake about 22 minutes at 375° or until eggs are firm in the center. Remove from oven and grate fresh Parmesan cheese over the top. Slice and enjoy!
We mix this up every time we make one. We just take what's fresh in the garden. We've used potatoes, asparagus, spinach, swiss chard and lots of other vegetables.
