I LOVE lemon curd. I'm organizing this years' women's tea for my church, so I volunteered to make the lemon curd. I found a wonderful recipe for microwaveable lemon curd on allrecipes:

I doubled the recipe (since each table will have it's own dish) and it turned out beautiful!
