I've been a busy little beaver with the potatoes, onions and carrots from my garden getting ready for winter. I put up 2 runs of beef stew and will probably do one more recipe for two more. That should keep us through those cold Okie nights!! I put up a picture essay at the blog if you would like the recipe. It's easy and you wind up with beef broth and canned dog food to boot!!

There is nothing better on a cold winters evening than home canned beef stew and a skillet of corn bread! Makes me almost look forward to winter!

Connie, with the temps having been as high as 114 degrees, you can be sure that we in Oklahoma are thinking that winter is looking pretty good right now!!!

Margo, you can freeze it in serving sizes. Anything with meet and low acid veggies MUST be pressure canned for safety. If you decide to freeze it, then instead of simmering for an hour, double the time to make sure your meat is tender.

ok, i have a dumb question.....do you just use a regular pressur canner to put this up? i could not see the pictures on your blog but it did sound wonderful and am thinking about doing it too. I have a regular pressure canner and a steam pressure canner (both recently purchased) and just wanted to make sure ...

Janiee, I use the type of pressure canner that has the weight on top with the varigated poundage. Mine shows 5, 10 and 15 pounds. This is cooked on 10 pounds of pressure. Some pressure canners have a gauge on top that registers the poundage by a needle showing correct pounds when it is reached. Plain pressure cookers won't work because they just have the weight that jiggles at who-knows-what pound pressure and there is no way to make sure that correct canning pressure is reached. Do your canners have a gauge or a weight on top?

Just curious, why are you not able to see the photos? Is there a problem with the site that I need to fix? Info would be appreciated! :-)
