Ok, I planted a little too much basil!!! It's going crazy with the heat we are having right now and I was wondering if any of you have some good recipes using basil other than pesto or freesing it in ice cube trays for later use. I absolutely LOVE basil, but I'm still in the process of learning to cook differently (I'm a midwestern girl). I'm loving experimenting with new foods and especially the herbs. Any input would be wonderful.

Tried the zuccini recipe the other night with the parmesean and bread crumbs. It was sooooo good. I'm allergic to tomatao, so I left that out, but it was still delicious!!

My basil is going crazy, too! I just finished making another batch of pesto, so thought it was timely to see this...I like to use basil in place of lettuce in BLT's - especially if you make brown sugar bacon (just spoon some brown sugar on it while it's frying), but be sure to drain on a plate, not a paper towel as it will stick. Some melted cheese on the toast along with the bacon, tomato and basil makes that about a perfect sandwich. Also, I like to slice English cucumbers very thin and put on bread with mayonnaise, top with basil and black pepper - a very nice, cooling sandwich for summer. Otherwise, just toss over pasta, or in pasta salad, and homemade pizza. Can't think of any other things I do with it at the moment...

I love Basil and this time of year with so much of it! I basically put it in everything! My favorites include any kind of sandwich like turkey, ham etc.. add a few leaves with lettuce and mayo and what not..yum! I also love it on eggs...I mix some in tunafish with onions and celery.. Love it mixed in with any kind of pasta dish without always having to make a pesto. We like various sausages, mixed veggies (whatever we have a ton of)..basil, and tomato..in your case you could make an easy cream sauce and voila! I would encourage you to throw some in anything you're cooking and give it a whirl!!

My daughter made a fantastic dressing for roasted vegetables the other night...she mixed chopped basil with minced garlic, wine vinegar, olive oil and lemon. You can sweeten it with a little honey if you so wish.
Basil on hamburgers with melted cheese on top (we used havarti) is really good. We had a treat and bought ground buffalo last week, that was sure good.
Other than making lots of pesto which we also use for homemade pizzas, that's all I can come up with at the moment.
Ok, now I'm hungry...

We had basil pesto foccacia bread with our baked ziti tonight. It was yum. Basically just foccacia bread with pesto spread on top before it's baked.

Here's a pasta recipe that's yummy and lowfat:
Penne with Chunky Tomato Sauce
1 T olive oil
½ cup finely chopped onion
1 garlic clove, crushed
2 - 14 oz cans whole tomatoes, undrained and chopped
½ cup tomato sauce
3 T parmesan cheese
¼ t salt
¼ t freshly ground black pepper
1 lb. tubular pasta
½ cup thinly sliced fresh basil

Saute onion and garlic in oil. Add tomatoes and tomato sauce; bring to a boil. Reduce heat and simmer, uncovered, 20 minutes or until thick, stirring occasionally. Stir in salt and pepper. Meanwhile, cook pasta. Toss tomato mixture and pasta in a large bowl. Sprinkle with sliced basil and cheese.

Sorry, just re-read the post and saw you are allergic to tomatoes. I don't think there's any getting around them in that recipe. Well, try some foccacia bread anyway!

And do you just freeze your pesto and use it later? I make mine without pine nuts because ds is allergic to tree nuts, but it doesn't seem to make any difference.

Oh my goodness girls!! Thanks so much for all the great ideas. I never thought of just using it on a sandwich. I have a lemon and basil pasta recipe. You saute minced garlic in olive oil than add 1/2C white wine and cook down to half. Remove from heat and then add 1/4C fresh lemon juice. Pour over pasta and then toss with fresh basil and parmesean. Very good and has a great fresh taste. You could also add diced tomato with the garlic.

I'm glad that Missy can grow basil because her mother keeps killings all her basil plants. At least I can go cut a fresh supply when I need it!! Every time I plant basil it turns yellow and dies -- too much water???

Kay, you sweetie!! I have been growing basil, faithfully for 7 years now.. This is my first year where it looks wonderful! I have tried it in all different parts of the yard with various kinds of watering, etc...still, up until now it got leggy, bolted to flowers, turned yellow or was bitter.. I also seed them myself and buy basically the same kind..This year, I built a brand new garden, put down a drip system and planted a few hundred plants.. They are amazing...my advice..keep trying...they'll let you know where they want to thrive!

I love basil too..and don't have nearly enough planted this year. I make alot of pesto and since it freezes so well I freeze it in the tiny 4 oz canning jars for use all winter. It can't be beat!

Garlic and Basil Cream Sauce over pasta
8 oz penne or other pasta 4 tbs. Butter 4 cloves garlic (minced or pressed) 1 cup light cream
10-12 basil leaves 1 med. shallot pepper and salt Freshly grated parmesan

Cook pasta. Melt butter in a small deep skillet. Add Garlic and shallots saute' 3 min. over low heat. pour in cream , basil , salt and pepper. Simmer over low heat covered but vented 7-10 min. until thickened. Pour sauce over pasta and add cheese

Easy Garlic Pasta
1 lbs box of spaghetti pasta noodles
½ stick butter
1 med head of garlic
8-10 basil leaves
Fresh Parmesan Cheese
While pasta is cooking place butter, garlic (pressed), and basil (finely chopped) in a heat proof glass bowl. Place bowl over boiling pot of pasta and let butter melt. Stir all ingredients together. Remove bowl and when pasta is done, drain. Pour hot pasta over butter mixture and toss .Addfreshly grated Parmesan cheese. Salt and pepper to taste. And serve. This can be a whole meal just add cooked shrimp or chicken.

Sounds delicious. I love a cream sauce over pasta. I got kind of burned out with it on pizza and started using basil pesto for a pizza sauce and it is wonderful. I sprinkl a little mozzerella and veggies and a little feta. Very Yummy. If you have a Trader Joes, they have a really good herb pizza crust. It's raw and you roll it out and bake it yourself.

I didn't finish my post earlier. These are the recipes I give out at the farmers market to help sell my basil. Today I sold 50 bags! And I still have plenty left.

Basil Prawns

2 1/2 tablespoons olive oil
1/4 cup butter, melted
1 1/2 lemons, juiced
3 Tablespoons coarse grained prepared mustard
125g/4oz minced fresh basil
2-3 cloves garlic, crushed
salt to taste
1 pinch white pepper
3lb raw prawns, peeled and cleaned


Mix oil and melted butter in a shallow glass bowl. Stir in lemon juice, mustard, basil and garlic, season with salt and pepper. Add prawns, and toss. Cover, and refrigerate for 30 minutes.

Preheat grill to high heat. Grease well.

Remove prawns, and thread on soaked bamboo skewers.

Cook for 4 minutes, on lightly oiled grill turning once, until just pink.

Pan Glazed Chicken w/ Basil
4 boneless chicken breast halves
1/2teas. salt
1/4teas. pepper
2teas. olive oil
2TBS. balsamic vinegar
1TBS. honey
2T. fresh basil
Season chicken with salt and pepper. Heat oil in skillet
and add chicken. Cook 5 minutes on each side or until chicken
is no longer pink. Stir in vinegar, honey and basil and cook

Basil, Garlic Vinaigrette
2C olive oil
1C white wine vinegar
1/4C chopped fresh basil
2 cloves garlic, peeled
Combine all in a jar with lid, shake. Refrigerate overnight, shake well before using.

Tomato Salad with Basil Honey Vinaigrette
4 Tbsp. balsamic vinegar
1 Tbsp. honey
1/2 tsp. salt
3/4 cup olive oil
1/2 cup chopped fresh basil leaves
3-4 tomatoes sliced and layered in serving platter
In a small bowl whisk together the vinaigrette, honey and salt. Add the olive oil and basil and whisk to blend. Taste and adjust seasonings. Drizzle over tomatoes and serve.
Note: It looks pretty with a layer of lettuce leaves under it and this extends the salad a bit.

Basil Stuffed Chicken
boneless chicken breast
1 clove of garlic for each piece of chicken
seasoned salt
5 large basil leaves for each piece of chicken
olive oil
tooth picks or skewers

Place each piece of chicken in between 2 sheets of plastic wrap and flatten to 1/4 inch with a meat mallet. Sprinkle each side with season salt. With a garlic press mash a clove of garlic on one side of each breast. Cover that side of the chicken with basil leaves. Then starting with the short end roll up the chicken and secure with a toothpick . Cook in pan with olive oil until chicken is firm and white on both sides. ( you can cook this on your grill) Serve with pasta , fresh chopped tomatoes, chopped basil and cheese. .

Tomato Basil Soup
4 cups tomatoes peeled, chopped and or 4 cups of canned whole tomatoes cored
8-10 fresh basil leaves
4 cloves of garlic (pressed)
8-10 fresh basil leaves
1 cup heavy cream
1/2 stick of butter
4 cups of tomato juice or vegetable or chicken stock Combine tomatoes and stock/juice in a pot and simmer for 30 mins. Then in small batches ,puree in a blender, tomatoes garlic and basil leaves. Return to the pot and add butter and cream and heat

Tomato Pie
4 c chopped drained tomatoes
6-8 leaves basil
2-4 cloves garlic 1/3 c mayo
1 med shallot 1/2 c parm cheese
1 BAKED pie shell
combine ingred and pour into pie shell bake 20 mins at 350 top with more parm cheese and bake 10 more mins

Baked Tomatoes with Mozzarella and Basil
Preheat oven to 350° F. Wash the tomatoes and slice them in half, horizontally.
Place them in an oiled medium/large baking dish with the sliced side up and bake for 1/2 an hour. Remove from the oven and put a slice of mozzarella on each tomato half along with a drop of olive oil, basil, and some bread crumbs. Return to the oven for 5 minutes.
These can be served hot or at room temperature.

Summer Spaghetti 6 medium to large tomatoes, cut into large chunks
3 small garlic cloves, minced
1 Tbsp. minced shallot
1/2 medium onion, chopped
3 Tbsp. coarsely chopped fresh basil
3 to 4 Tbsp. balsamic vinegar
6 to 8 Tbsp. olive oil
Salt and black pepper to taste
Tabasco sauce to taste (optional) Drain off and discard any liquid from the tomatoes. Mix the tomatoes with all the remaining ingredients. Let the mixture stand at room temperature for about 20 minutes. Toss with hot pasta and top with grated Romano or Parmesan cheese.
or parmesan mix will fall off. Serve hot.

BBT Sandwich
1-2 leaves of basil (Preferably Lettuce leaf type)
2 slices of whole wheat bread
Mayo
Lean Bacon (fried)
One slice of large tomato
Assemble the sandwich and enjoy!

My favourite is pide bread with pesto on it, chargrilled vegetables, the type you get from a jar, and the basil leaves, and I think there is a bit of parmesan in there too, I haven't made it for awhile, I think the bread is toasted.

Make a pesto with it using fresh garlic, shredded romano or parmesan and a bit of olive oil, then flavor with pepper or salt.

I mix it with cream cheese or layer it over cream cheese on cross slices of italian or french bread and broil in the oven until just slightly brown. Yummy!

Okay, I know this is going to sound weird, but is really is good! I like to put some basil leaves right on top of my tuna salad (in a sandwhich). It gives the tuna salad a really fresh taste.
