Have any of you tried baking with agave nectar? I use it to replace my sugar in my coffee,(get to feeling pretty dizzy if I use reg. sugar in my coffee-glucose issues??).... but wonder if I could use agave in other things too.

I have used agave nectar for baking but be aware that sometimes you have to adjust the amount of other liquids a bit unless you are substituting it for maple syrup, honey or molasses. I also like agave nectar it on my hot cereal for breakfast.

I've not baked with it but I do use it on toast and in tea! It's nice that diabetics can use it too. Better than that other sugar substitute stuff! Yuk! giggle*

I made several berrie cobblers last summer, excellent! I just followed the directions for amount of sugar it's equal too, mixed it in with the berries, used a regular cobbler mix for the top (oatmeal, brown sugar, butter), came out great. That's the only thing I made baking-wise. Good in hot tea, and in cereal...
