Farm Kitchen: Garlic scapes now what?  |

I have just harvested quite a few garlic scapes. I know they are edible but have been a little funny about using them. They have that white bulb or flowery thing on them. What do you ladies traditionaly do with yours? Do you use the whole thing in your cooking?
I threw a couple on my roasting chicken with herbs to see how it would taste. I put the rest of them in a bag in the fridge. I just hate to throw them out if there is a really super yummy way to use them.

Pesto, Pickled, or even frozen they are great. Use them up. I have a few left over in the freezer from last year. This years harvest is going to be pesto and pickled garlic scapes. |

I hate to admit it but I am not a fan of pesto. I like basil in my spagetti sauce and in other foods. I tried pesto and its too strong for me. I almost choke when I ate it on noodles. I really wish I could eat it but its an overload for my taste buds.
When you saute them do you use the entire thing including the white flower bulb thing on the end? I have about 50 scapes I don't think I have enough to can or pickle. Thanks so much for the suggestons.

Linda, I tryed some for the first time last spring. I was told to saute them with other veggies. I did and they were SO good. I found some growing wild and did that this spring.

In MaryJanes Ideabook she has several recipes for garlic scapes. Preheat your oven to 350 degrees, place eight whole garlic scapes in foil, drizzle with olive oil, cook 20 minutes or until tender. My favorite is Garlic Scape Risotto. If you don't yet have the book, check it out at your local library. |

Use them to make mashed potatoes - they'll be the best mashed potatoes you'll make!!!
I also use them in salad dressing, soups, and add them 1/2 way through when I make roasted veggies. You can eat the veggies as a side dish or you can freeze them and make them into a dip in the food processor with white beans and left over cheeses (feta, cheddar, goat - anything that will puree nicely). It's divine and a favorite at parties!

I will have to get my book out and look. I haven't looked at the book for over a year. I did not remember those recipes. Thanks so much for reminding me. I had put the rest in the freezer until I came up with something else to do with them.
