1 box chocolate cake mix
1 can pumpkin

Mix together. Bake at 350 for 20 minutes. Why did I not have this recipe sooner?!

I think it was an 18 ounce mix, whatever they had at Aldi (my favorite place to shop these days with my limited budget!). I am certain you could use spice, that would probably be delicious! The chocolate ones trunes out really moist and I can't believe only 2 ingredeints!

Paula, yes spice cake mix works well also, i have made this while camping in the dutch oven with sliced apples, a spice cake mix and a can of diet soda. Was delicious warm when it was cold in the fall. Never thought of making it with cupcakes! :)

15 oz can of pumpkin. Works with all cake, muffin and brownie mixes. It will color lighter mixes, like blueberry muffin mix for instance orange. But, they still come out great, and we love it that way. At first it will seem like it's not wet enough but keep combining the mix with the pumpkin and it will work. Every if it seems real dry at first. The brownies come out more cake like but you save a ton of calories in eggs, and oil, and you add fiber!

I made the cupcakes today. They are yummy. Now if my other half likes them, we have a winner for the whole household.
I was thinking for special occasions that adding some mini chips to the batter would be good, although the cupcakes are already rich in flavor!

My mom adds mini chocolate chips and likes them that way, but like you said Kate, they are already so rich I don;t know how much more I could add! Although now that just got me thinking...what about a cream cheese middle? That would be soooo good with these! Will have to experiment this weekend!

Hi Liz, I made this tonight for my dinner guests except I baked it in a bundt pan and then drizzled a cream cheese frosting on it warm and it was soooo good! I would of never believed I just needed two ingredients. Thank you for sharing!

Elizabeth,my sister told me about the cake mix and pumkin. She said you dont use anything else . And you can use any cake mix. She said her friend does this because it is lower in fat. I want to try it?

Oh all the times I needed to bake and had no oil or eggs on hand I could have used this! I always have canned pumpkin on hand. Can't wait to try this!

I totally found this recipe a few weeks ago, I made it for breakfast and my family LOVED it! Plus its amazing with coffee. I agree, why don't people find out about these easy peasy recipes sooner?!

I have used a similar recipe for pumpkin cookies. Just use 2 boxes spice cake mix, 1 large can pumpkin and 1 pkg. chocolate chips. Simple and delicious!

14 to 15 oz can (so the smaller can) you can always put opart of the larger can in a freezer bag in the freezer.
