I can't wait to try this, my kids never have enough jam or jelly for peanut butter sandwiches, and I never have enough uses for zucchini. Hopefully this kind of bait and twitch doesn't get them into therapy.

The person who shared this insists it will work with whatever jello flavors you want to try, so give it a shot with raspberry or peach too! This is a soft serve pectin free recipe, so you can add a little pectin if you like, or reduce the sugar if you dont like your food too sweet. I'll be doing with with splenda, so wish me luck!

Ingredients

* 5 cups peeled and shredded zucchini
* 5 cups white sugar
* 3 tablespoons lemon juice
* 2 (3 ounce) packages strawberry flavored gelatin

Directions

1. Stir the zucchini and sugar together in a large pot over medium heat until the sugar has dissolved and the mixture begins to boil, about 10 minutes. Stir in the lemon juice and gelatin, and continue simmering 5 minutes more, stirring constantly.
2. Ladle the hot jam into 6 hot, sterilized half-pint canning jars leaving 1/4 inch headspace. Wipe the rim and jar threads with a clean, damp cloth. Center lid on jar and screw the ring down firmly. Place into a boiling water canner covered by 2 inches of boiling water. Process for 10 minutes. Remove from the canner, and allow to cool to room temperature, and refrigerate any jars that do not seal.

sounds too good to be true-will wait to hear what others say!!!! don't have any zucchini yet......clever !!!!!!!!!!!!!

I finally got around to making this, and I think it's a success. My picky mother won't eat it because she says it "tastes fake" but she wont eat anything I make with zucchini in it. My kids LOVE IT! they insist its the best jelly ever. What I was hoping to do was make something to go on peanut butter sandwiches out of my excess zuccs and I can say mission accomplished!
