I soak mine overnight, rinse and cover with lots of water.

Then add 2 whole, peeled onions, a ton of minced garlic, 2 bay leaves, a handful of celery flakes(or half a bunch of fresh with the leaves), a fair amount of thyme, and a bunch of parsley, fresh or dried.

Boil till about half soft, then brown your meat. You can add a diced onion and fresh garlic or whatever while browning it if you'd like. Drain that very well and add to the beans.

If you have them and would like to add them, tomatoes are nice in this as well, but makes it taste more chili like. You can also add any other peppers or spices or whatever. I sometimes add diced bell peppers and a pinch of red pepper flakes with or without the tomatoes.

There are tons of websites with bean recipes. I have even used them in place of meat in my cassaroles and in homemade 'hamburger helper' in place of the meat.

Remember, leftover beans are great in a burrito shell or pita bread with a little shredded cheese on top!

Thanks. That recipe sounds good. And you're right--adding tomatoes would make it like chili.

For today, since I got up early and hadn't thawed any hamburger I went the classic route and added a smoked something or other from a pig's leg.
