I don't own a pressure cooker, and may not be able to add that to our homestead just yet. So my question is, can I freeze it just like I do my sweet corn? I typically cut it off, blanch after it's off, etc. and freeze it. What do I need to do for creamed corn? More of the milk from the cob? I am replacing all my canned creamed corn with organic creamed corn this summer.

I always blanch on the ear, that way, when I cut it off, the milk is good to go. It takes a bit longer to cool, but it's not a big deal for me. I use the "imperfect" ears - those that are smaller, have had "visitors" or are just not pretty enough for cob corn. It's wonderful and tastes like you just picked it. I hope it turns out well for you!
