We cook Mexican food often....real often, so we really don't need an "excuse", but since it is Cinco de Mayo we will be having a Mexican dinner tonight!

Most likely ~

Beans
Enchilada (or enchilada casserole)
Salad
Chips and salsa

Homemade ice cream

Happy Cinco De Mayo to you as well. We live for Mexican Food in our household as well, looks like it will be my homemade Chicken Enchiladas with Margaritas tonight. Plus you have to have refried beans and salsa with chips. What a wonderful day to celebrate!

It was my husband's birthday. He loves tacos, so we made tacos for his dinner. I make a taco flavoring mix from scratch vs. buying the packets and love it.

Happy day after! Violet and I went to Maya's a little taquiera near our house. I had an asada Torta, one of my favorite items to get--I love all latin foods, but when you're hungry, a Torta satisfies! Since I was with the wee girl, I didn't par-tay, but did have a Dos Equis with dinner to wash down the VERY hot house made habanero salsa on my Torta.

Then, it was on with the Mother's Day shopping!
