Does anyone else make their own flavored vinegars and oils? Today I started some garlic cayenne oil. What combinations do you make?

I have flavored olive oils before, but never vinegars.

I use alot of vinegars for oil and vinegar salad dressins..i also use it over pasta... I use white vinegar for tarragon. Usually for salad vinegar I use white wine. It's alittle less tart. You can use red vingear also..use one herb or mix them..its fun trying different combinations..i use oregano alot..its my fav.. I make light olive oil with dried oregano,garlic,salt and pepper. Heat in mircowave about one min..let it stand until cool, then refrige it until I need it. I use alot of this for my veg pasta salads. If ur don't like what you made...add water and water something in ur garden...

My favorite combinations are rosemary and garlic oil, as well as thyme oil. I love dipping oils so these flavors work well for that, as well as pastas.
