Ladies,

My DH loves beef stew, so I canned him a bunch. Well a few batches later and he put in a request, for canned chili. I do have a pressure canner (and have gotten over my fear of using it).

Does anyone have any good suggestions for recipes? Thanks so much!

I canned some chili this fall using the recipe out of the Complete Book of Canning by Ball (the big book), I think the small Ball book has it too. Very good recipe!! In the Big Ball Book they give an alternate at the bottom for spices to use and that is the recipe I follow. Will never buy chili from the store again.

We canned a ton of chili last year and it was amazing all winter! We used this recipe http://bit.ly/h90qfy but it makes a crazy ton and I had to divide the pot into two mid cooking because it was so full I couldn't stir it well. It started burning on the bottom of the pot! I suggest doing a 1/2 recipe at a time.
