I was at farm fair this weekend and picked up 3lbs. of the mix. In the last two days I have had strawberry scones, pancakes and biscuits. It tastes wonderful!! The scones are my favorite so far. I think I patted my biscuits down to thin before I cut them so they weren't very thick, but tasted very yummy. I think tomorrow I'll try cookies, and then after that........
Love and Blessings,
Missy

So, I've been looking at the budget mix. I'm assuming it's a bisquick type product, but I wanted to make sure before I buy 3 lbs of it... it sounds like it is since you are making all those different things with it. How far does 3 lbs go? I saw on the website that it says 17 servings, but that doesn't sound like a lot to me when you divide the servings by my family of 4. Is that more like how many recipes you can get out of it?

You only use varying amounts for each recipe -- kind of like Bisquick only much better. So I feel that 3 lbs. will go quite a ways. The whole wheat is great -- so fine that is mixes just like white flour. You really will love it.

I love it! My hubby and I wanted pizza a couple of weeks ago, but instead of ordering in, like we normally do (shamefully) we made a FRESH homemade pizza with budget mix crust. it's SOOO easy! It really makes me want to cook at home more!

I made scones today from the budget mix -- they were so yummy! Didn't get them done for breakfast but had them with my coffee this afternoon.

I love the budget mix. I made Sloppy Joes the other night and realized I forgot buns. So I mixed up a bakeover crust from the mix, baked it and ate and ate and ate. My husband really like it. He took the leftovers for lunch. I have to try the scones. Mary![](icons/icon_smile_wink.gif)

Made the best Mexican Fiesta casserole from the mix the other night. It was on the back of a baking mix box and I just substituted with the budget mix. Brown one lb hamburger and add taco seasoning, cook according to pkg directions. Set aside. Mix a 16 oz can refried beans, 1 cup budget mix, 4 oz can chopped green chiles, 1/4 cup water. Spread this mixture in the bottom of a 2 qt casserole dish. Top with the seasoned hamburger. Top with 1 cup chunky salsa and then finish off with 1 cup shredded cheddar cheese. Bake at 375 for 25 minutes. Quick, easy, and yummy. This would be great served with tortilla chips as a party dip too.

I too love the budget mix!! The whole wheat is WONDERFUL! I made the golden raisin, walnut, asiago cheese and rosemary panbread - OH MY!!!! It was truly one of the most remarkable things I've ever made! I also gave a copy of the magazie and some mix as a b-day present to a fellow farmgirl - she absolutely loved it! |

I love the budget mix and the buttermilk biscuit mix too. I make drop biscuits a lot. I mix the dough and then spoon/drop the biscuits onto a pampered chef stoneware tray. They make great biscuits in so little time. YUMMY!

Hi,
Received my first order of Budget Mix yesterday, and I made my favourite banana bread with it, substituting the budget mix for the flour amount, and omitting the salt, baking powder and baking soda from the recipe since I knew it was in the mix. It turned out great, and this bread seems more filling to us than it usually does (maybe just our imagination!)
I have a question: I want to make a BakeOver tonight, and I can only seem to find the amount of mix to measure for a small 9" crust. I just bought the 11" pan, and would like to know how much Budget Mix to use for a larger crust.
Any suggestions? Thanks,
Lori

Lori-
I would suggest just adding in an extra 3/4 cup of budget mix and 1/3 cup water. That should make enough dough to cover your top.

Hi Lori! Sorry this is late in coming to you and thank you Alee for your suggestion BUT for an 11 inch crust, you merely double it. I know that doesn't seem right but since it's the outer two inches of the pan, you need an equal amount to what's in the center. It's one of those math things! Good luck. If you have any more questions, don't hesitate to ask and THANK YOU for buying our skillet!!!! MaryJane |
