it's not exactly from scratch but every one loved it that I served it to on Saturday. I used a 8x8 dish, but you can double the recipe and make it in a 9x12 as well.

I took a large 29 oz can of peaches in water, and drained the water into a sauce pan, added enough cornstarch to thicken the water, I boiled till thickened. Then I put the peaches in the baking dish, poured the thickened water/juice over peaches. Then I sprinklled 1/2 a box of yellow cake mix (dry) not mixed with anything! on top of peach mixture, I sprinkled pecans on top, and then used slivered butter (but you can also freeze butter and use a cheese grater to do this) all over the top, make sure to cover the entire top of the cake, any area you miss putting butter on will bake dry powder and not cake/crust like. Bake in oven at temp and time that the box of cake mix calls for.

Can't get much easier than this, large can of peaches, 1 cup of milk, 1 cup of flour, 1 cup of sugar. Drain peaches, mix peaches milk, flour and sugar together. Pour into buttered (we use iron skillet) pan. Bake at 350. My husband likes his served with can cream, but I prefer ice cream.

1/4 cup melted butter
1/2 cup flour
1 teaspoon baking powder
1/2 cup sugar
pinch of salt
1/2 cup milk
1/2 teaspoon almond extract (optional)
2 cups canned or fresh fruits, with juice
Preheat oven to 400°F.Pour melted butter into a 9 inch square baking dish.
In a medium bowl, stir together flour, baking powder, sugar and a pinch of salt. Stir in milk and almond extract, if using; mix only until combined.
Pour the batter over the melted butter in the baking dish.
Ladle fruit with juice over the top of the batter.
Bake in preheated oven for 25-35 minutes, or until batter rises to the top.
Serve as is, while still warm, or top with vanilla ice cream.

*we love this one. The crust is so good, I usually double it. I use the normal amount if peaches, and Exchange almond extract for vanilla, but the kids and DH always wanted mire of the crust, so...double and enjoy! Happy anniversary!!

The tears I shed then, watered the flowers I harvest now.

Tinaberry, is that all purpose flour or self raising?

Thanks ~ sounds like one my sister used to make.

Debi, I use all purpose for everything and add baking soda and salt, but my mother only uses self rising. So either will work.

Here is an odd one, my friend makes it and its so good,

Get a regular glass baking pan, put frozen peaches in it, cover with Yellow cake mix, (yes from a box) and then pour a can of sprite on it. Cover with foil and bake until LIGHTLY brown.

Its odd but good
