As I read a lot of post it appears that many of us are starting to "put up food". I thought it would be nice if we shared some canning recipes. I am really interested in Chow Chow recipes and recipes for canning meats & soups. Here is my Great Grandmothers recipes for old fashioned brine pickles. She was from Germany and these are salty brines. I sell out of these at the local farmers market.

Brine Pickles
27 med cucumbers cut in pickle strips
~soak cucumber strips in lime water for 24 hours
~wash & rinse well
~soak slices in ice water for 3 hours
~ drain and pack in prepared jars
~ in each jar add 2 cloves of garlic, 1 cayenne pepper, 1tsp of Dill

In large kettle mix brine
~ 6 cups of vinegar
~ 1 1/2 cups of Salt
~ 18 cups of water
Bring all ingredients to a boil
~ fill each jar to bottom of rim with brine
~ wipe down jar rim & put on lids
~ place jars in hot water bath
~ bring to boil
~ boil for 12 minutes
Let set for 2 weeks prior to eating.

Wow Tammy those sound wonderful! I am just learning to can so I don't have anything to share yet but this post will help me so very much!

Tammy, do you mind telling how to make the lime water to soak the cucumbers in? Thanks!! They sound wonderful
