As I read a lot of post it appears that many of us are starting to "put up food". I thought it would be nice if we shared some canning recipes. I am really interested in Chow Chow recipes and recipes for canning meats & soups. Here is my Great Grandmothers recipes for old fashioned brine pickles. She was from Germany and these are salty brines. I sell out of these at the local farmers market.
Brine Pickles 27 med cucumbers cut in pickle strips ~soak cucumber strips in lime water for 24 hours ~wash & rinse well ~soak slices in ice water for 3 hours ~ drain and pack in prepared jars ~ in each jar add 2 cloves of garlic, 1 cayenne pepper, 1tsp of Dill
In large kettle mix brine ~ 6 cups of vinegar ~ 1 1/2 cups of Salt ~ 18 cups of water Bring all ingredients to a boil ~ fill each jar to bottom of rim with brine ~ wipe down jar rim & put on lids ~ place jars in hot water bath ~ bring to boil ~ boil for 12 minutes Let set for 2 weeks prior to eating. ENJOY!
