I made mine last night because my husband has to work this evening. He's not a fancy eater, so I bought a grass fed, organic chuck roast, rubbed with 3 tsp. allspice, 2 tsp salt, 1 tsp pepper, slice onions and fresh chopped garlic and braised it for 2 and half hours. Added some gorgeous organic carrots and organic Klamath Falls potatoes, fresh made dinner rolls and some organic Samuel Smith's Lager. Perfect dinner for my guy, and I wasn't slaving all day!

I have class all day, but I did start some chili in the crockpot. I figure something is better than nothing! I did make him some cute jeely tart cookies yesterday with heart thumbprints.

I've gotten away from most packaged processed foods, but my hubby loves those stuffed chicken breasts in the freezer section, so I got one of those for him, and I'm baking sweet potatoes and cooking kale from my garden last year. Looks beautiful, and I'm not working at it all day. :)

That organic roast sounds good Jonni! I will be making baked chicken breasts stuffed with herbed cream cheese (couldn't find the goat cheese I wanted), wrapped in bacon. Pan fried italian potatoes and cut green beans with sauteed shallots. Should be interesting!

Welllll...I think I'm the lone wolf out there. Just going to make myself some leftover soup and and a salad and call it a night. My dear Valentine has to work and so he treated me to a yummy dinner out last night. Don't get to do that much. Poor him. It's going to be a late night. Hope you all have a wonderful Valentine's dinner.

I think Sharon is the "fanciest dinner" winner! YUMMO!
And, Mary Beth, sometimes, being your own Valentine is a good thing! Me and the girl will hang together tonight, and probably eat pizza :)
The roast was super good. I found the recipe at Epicurious--it's from Gourmet Magazine, 2005, and was French Canadian in origin. http://www.epicurious.com/recipes/food/views/Braised-Beef-and-Onions-232969
It called for simply serving it with onions, over noodles, but the last hour and 30 mins. on the clock, I added my carrots and potatoes and basted it a little with pan juices. Then used the pan juices to make a gravy with a little flour while the meat rested before slicing.
I think it's the best roast I've made in a long time--incredible flavor for very little effort.

I'm making meatloaf (my family's favorite), mash potatoes and creamed spinach, if I can find a good recipe. (I have spinach, onions and cream). My honey is working too, so he will warm it up when he gets home. We had a nice family night last night and exchanged Valentines/little gifts this morning. I think I will watch a good Hallmark movie and do some knitting...

I know this is late but I was so busy I didn't see this thread until today.
On Valentine's I made Poached Salmon with a hollandaise sauce, asparagus, and herb salad. For dessert my boys and I made a heart shaped chocolate cake with chocolate icing topped with fresh raspberries. It was so good. Actually there is a piece of that cake left and it is calling my name!
