I am making zuchini bread today. Does anyone else have any great recipes for shredded zuchini? I froze a bunch last year & it good baking weather! (below zero)

I put it every thing I bake from cakes to cookie to brownies. Just make sure you drain off excess liquid.

I use it with shredded potatoes into hashbrowns. It takes away some of the harshness of the potatoes and more veggies!
