I'm no cake maker. I'm a pie maker. And I shy away from cakes because I just can never seem to get them right and baking shouldn't make you cuss.

The thing is, I want to make Violet's birthday cake for her party. My mil is making cupcakes for the kids, but I want something wonderful for the adults, and that Violet can blow out the candles on, which she loves to do. It's a photo opportunity, but moreover, adults like cake...

My mom has this Cake Dr. book and I was thinking about looking through that--but then I thought, the farmgirls make cakes, I know it!!!

I'm not opposed to making a "semi-homemade" cake, either. In all honesty, I love box mixes--they never let you down in the moist cake dept.

Here's a trick. I have done it both ways - but the trick to making a box taste homemade is to use buttermilk instead of the water in the recipe. It adds a whole other dimension and can fool even the best tasters! And, just for the record, I love the Moist Deluxe cake mix - whoever makes it - but sometimes it's too moist to make in layers. When I need a layer cake, I just use a regular mix - the taste and texture is good, it's just not so "fluffy" it doesn't want to stack. This probably wasn't much help, but it's the best I can do from work. Good luck!

Great tip, Holly! I'm just hopeless when it comes to cakes...I never can get them done quite right.

So, I just use a regular mix cake but replace the water with buttermilk. Right?

Awesome, thanks! That makes me feel a whole lot better. I wanted to make a lemon cake with strawberries and vanilla bean icing, so having the cake actually "work" takes a load off my mind!
