This is great!

Overnight Crock Pot Oatmeal

1 cup steel cut oats
4 cups water
(if using a slow cooker liner decrease the water to 3 1/2 cups)
1/2 cup half and half or milk or 1/2 cup additional water
1 cup dried fruit of choice, optional
(apples, raisins, cranberries, apricots, blueberries, cherries, etc)
or 1 - fresh apple (chopped)
1/4 cup brown sugar
1 - tbsp butter
1/2 - tsp vanilla extract
2-3 Tablespoons cinnamon sugar or 2 tsps. cinnamon spice mixture.

First off find a bowl that will hold four cups of liquid, and fit inside your crock pot with the lid on. Measure out one cup of Steele cut oats. Pour that into the inner bowl. Add the four cups of water, milk or half and half, brown sugar, vanilla, butter and cinnamon sugar. If you would like to add dried fruit or a cut up apple the add it as well. Fill the crock with water to about halfway. Set the inner bowl in the crock and see how high the water rises. Add more water in the crock if necessary. Try to match it so that the water reaches about the same height on the outside of the oats bowl or just below the bowl. Place the lid on your crock pot. Set on low and go to bed. When you get up the next morning your oatmeal should be cooked perfectly in that steamy water bath. Sprinkle with nuts, if desired.

I love steel cut oats and have been doing this for several years - I don't use a crockpot - before I go to bed I use a heavy saucepan, bring 4 cups of water to a boil, when boiling add the steel cut oats (1 cup), stir, turn off heat and move off of burner. Cover the pan and let sit overnight. In the morning I add milk and vanilla, and other add ins of my choice, cook over medium heat for 10 - 15 minutes. Little more work in the morning. This is 3 servings for me - so I refrigerate and have two more breakfasts. Sometimes after adding the milk and vanilla and cooking, I then take out the portion I am going to refrigerate, this allows me different add ins. The possibilities are endless! Have a great day.

I have old fashioned, not steel cut, oats. Is this recipe still doable?...any changes necessary? Would give me some extra time in the mornings....and who doesn't need that!! Thanks...God Bless...Debra

Great idea to use the crock pot. Here's my "science of oatmeal" ---- I get up, put on the tea pot. Check my email. Pour the boiling water over the oats in a bowl. Put a glass plate over the top. Take a shower and get ready for work. Then when I am ready, go back, add in the fixins'. So yummy and good for me too. The oats are not soggy. I usually put in a scoop of brown sugar, some dried cranberries, organic coconut and a sprinkle of chopped pecans on top. I quit eating instant oatmeal several years ago. Once you go to this kind... can't go back to the gruel.

It makes about 4 servings..given the size of each serving.

You could use regular oatmeal..but since steel cut oats is much coarser
you would probably need to cut back on the milk or water...but I'm not sure
how much. The cool thing about cooking it in a crockpot is waking up to a
hot hardy breakfast when you're still half asleep. When I make it..its usually on a weekend.

I make my own "instant" mix too using dry quick oats..a little brown sugar, some cinnamon
and some dried fruits..I really don't measure it out. I just put about 4 cups in a storage container..ad
about a 1/2 cup brown sugar and a tsp or two of cinnamon...then whatver I have on hand..craisins, raisins, dried
apples..walnuts etc.

I'll never buy pre packed instant oatmeal again. This is so much better.

Here's a recipe using the regular old fashioned oats

Crock Pot Oatmeal Recipe
Ingredients
1˝ cups rolled oats
1/3 cup sultanas (golden raisins)
2 cups milk
2 cups water
Method
1. Put it all in the crock pot.
2. Give it a quick stir. Put lid on.
3. Ensure crock pot is on the ‘low’ setting.
4. Put timer on, so that it starts cooking 4-4˝ hours before you want to eat.
Notes
This is enough for 4 to 5 people.
You may need to experiment a little to get it exactly to your own liking.
Put on last thing before you go to bed.
Don't leave longer than overnight uncooked or the milk will go off.
