Does anyone do this? I just found a recipe in a magazine I got from the library. We do grow watermelon in our garden, but have always put the rind in the compost.

LOVE watermelon rind pickles!!! One of my favorite memories from my Grandma's kitchen. I bet they're even better with homegrown melon rinds!

Can you tell me about canning them? It says to use the white portion of the rind.

My gramma made these! They were always one of my favorites. I know you have to trim the rind of the hard green outer skin and also the red part. Gramma used to collect the rinds after the kids were through eating the sweet, red flesh and then set about trimming. I don't have a recipe, but I hope someone posts a good one. I'd love to try this this summer!

I do this! You do trim the hard green skin and the mushy red, and keep the white part. I have a recipe too if you want. My husband loves these, in fact, he has an open jar in the fridge right now! I haven't been able to bring myself to try them, though I have made them for him. They smell wonderful when they cook. Like apple pie!
