I want to make the candy that the Pioneer Woman has on her web site but am confused about the melting chocolate. I was in 2 stores yesterday looking for it. There just isn't a whole lot to choose from. And she says to NOT use chocolate chips, that it has to be good chocolate. So does anyone know what to get? There are the bars but they aren't very big and I'd have to get alot and that could get expensive. She puts it on the top and botton. It's toffee, I just remembered. So I need help. Thanks.

I seen that recipe. First, kudos to you for trying it! I know in some of her recipes she's used the chocolate you buy in pieces in a bag at Michaels (or probably Hobby Lobby). But I don't know chocolate, so not sure what she considers good quality chocolate. Sorry I wasn't much help. Would love to hear how it turned out!

hi kris, i used to get chocolate disks from the craft store for melting. they have dark or milk. i think they have more oil in them and melt better than a choc. chip. sounds yummy. happy days sherrye

Kristin, we've been making that toffee in our family for many years and we use hersey's milk chocolate chips. We melt them in the microwave and if it's too thick, add a little shortening. We used to coat both sides of the toffee, but as chocolate got more expensive and we got more lazy :-), we started just spreading one side with chocolate and putting nuts on that. It breaks up nice and looks pretty in a jar with the toffee color and chocolate color. People like it just as well.

I learned at the Bedré Chocolate factory that those chocolate disks, hersey bars, etc have lots of parafin in them. Their chocolate does not and therefore melts at lower temps. Hence, they don't ship after February. As I started tasting their chocolate compared to others, I realized the real different in the taste! But they are too expensive to use for candy making for sure!! Anyway, just letting you know that if you don't find the chocolate disks, we'll be making our usual toffee for gift baskets and using plain ol' Hersey's chocolate chips!

Mary Beth, that sounds easy enough. I just got a bag of Hersey's cc so I will use them. Thanks y'all. I knew I would get help here. And the toffee does look good. And I really need some right now. Really bad.

Kris, I use Baker's Chocolate found in a grocery store. Each sq is 1 oz (I think) and that's what I use for brownies, etc. It melts really nicely (bitter as all get out though, lol, so it definitely needs sugar added). Happy Baking!

Jewel, that's the thing I noticed on most of the chocolate bars. Bittersweet. That's why I was confused as to what to get. So you just stir in sugar after it's melted?

Yep, I put in the sugar in the pan that I'm melting the chocolate in and keep stirring until it looks smooth and not granulated-like.
