Ok, farmgirls, my cousin gave us elk from her husbands last hunting trip. It is frozen like a brick and I got 3 one pound packages of ground meat and one of elk steaks. She said the steaks were great cooked like fajitas.
I think some of you might have more elk experience than I, considering I have none. Any recipes to share?
Oh, LaVonna! Lucky! My uncle used to bring home elk sausages all the time from his hunting trips - they were the best! I don't recall having elk any other way, but I am very sure you are in for quite a treat! Enjoy! - Nini

Cooking wild game is exactly the same as any other red meat except for it is extremely lean so cooking time is less because it will dry out. We have elk all the time as hubby gets one very year. Elk steaks we take out of the freezer, put it in a ziploc or sealed container with garlic and spices. Then it goes in the fridge for a couple days to unthaw. We cook it in the cast iron frying pan with oil and on high heat to sear then turn down to a medium high and cook until done. Do not overcook. So if someone likes their steak medium rare cook it to what beef rare would be. As for the ground use it however you would like in whatever recipe takes ground meat. If you are making fajitas with the steak slice it up while it is still a bit frozen as this makes it a lot easier to cut into nice thin slices. Good luck, elk meat is our favourite.
