It's getting to be stew weather and I love adding egg noodles to my stews. This year I'd love to make my own!
I have plenty o' questions before I get started... Of course! What is the best way to store them after they've dried? How long is their shelf life? Anyone want to share their favorite recipe?

I dry mine but then I keep them in the freezer. I make lots when I have extra eggs! Then I have noodles all winter! Egg Noodles
3 cups all purpose flour 1/4 tsp salt 4 eggs at room temperature water
Mound the flour & make a well in the center. Break your eggs into the well & put in salt. Mix flour into eggs. When the mixture can't absorb any more flour., Sprinkle a tsp of water over it & continue to mix. Keep mixing until it starts to stick together as a dough. Knead lightly on a dusted board til smooth & elastic. Divide into 4 balls. Roll out on a dusted board to 1/8 inch thickness. Lay out on flour sack towels to dry. Cover witha 2nd towel. Cut into size you want. let dry 1-3 hours. Freeze.

I just make up the dough, roll it out and then add to my soup. When I make large batches in the summer (because I have lots of eggs)I make up the dough, place in the pasta machine, then hang them to dry. They don't take long to dry when the weather is warm and dry. As for storage I keep mine in the freezer until time for use.
Afew years ago I had a brain storm. I love organizing fun event and a bit strange so that everyone just comes to see what this is all about. A noodle party everyone brought enough ingredients for 3 batches and we went to making noodles we had them hung everywhere but what fun after they dried everyone got to go home with there fare share of the loot. Yes they keep in the freezer great. Since that day we have gotten togeather and made noodles quit often. We let ours dry over night. Have fun we all do
Karla, your recipe is just as I remember. Watching noodles being made is one of my earliest memories. Noodles are my all time, #1 comfort food. I can still see them drying on flour sack towels hung over the backs of kitchen chairs. Actually, I just made chicken and noodles on Sunday. Yum!

Awesome! Thanks gals! I have some eggs that have to be used soon because they got frozen and their shells cracked (good thing I get a dozen delivered every week!) so I will be making a bunch of noodles!
