I have been making zucchini pickles as well. They turn out better than cucumber, firmer & taste is good also. |

Yes Robin, I am sold. They are ot super crunchy, but the consistency is so much better. I do not buy all the extras to make them crunchy, & have always found that my cuke pickles are kind of slimy after processings. Not the zukes... I am presuming that is due to a bit less water content in the vege to start with. I would HIGHLY recommend Jackie Clay's Canning Book. This lady does it all, & I trust her completely. (she bought raw land, built everything & lives off grid, & she did this in the midst of her hubby dying, & also discovering she had cancer, & chemo etc; she is beyond inspiring) I have several canning books, but they are all gathering dust, as hers is the one I go to time after time. I got the zuke pickle recipe from there. |

Well, alright then. I am trying this recipe. It looks pretty easy for a trial run. I have made zucchini relish and loved that. My cucumber pickles have never been right. |
