Now that the weather is cooling off a little I get itching to bake more. My hubby got his Mother Earth News magazine in the mail last week and there is a carrot/apple muffin recipe that is delish. It wasn't overly sweet which is what I prefer, family loved them. I'm sure the recipe is on their website. Or I can post it if anyone wants it.

Sure, here it is, I fortunately had everything on hand to make it and didn't have to go to the supermarket.
Carrot Apple Nut Muffins/ preheat oven to 350,grease muffin tin or use liners,
1/2 cup chopped walnuts or pecans, 2 cups raw shredded carrots, 1 large apple,
peeled, cored and shredded, 2 cups all purpose flour, 1 cup sugar (I used half
brown sugar, half organic sugar crystals), 3/4 teaspoon baking soda, 1 & 1/2
teaspoons baking powder, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, 3 large
eggs, 3/4 cup veg oil ( I used organic coconut oil) 1/2 teaspoon fresh ginger -
grated,( didn't have fresh ginger though so I used 1/2 tsp ground ginger), one
teaspoon vanilla extract. I shredded apples last to prevent browning.
Mix all dry ingredients together in a large bowl and stir in nuts, mix eggs,oil &
vanilla together and stir into carrots/apples, make a well in the center of the
dry ingredients, pour wet ingredients into the well and stir slowly with a
wooden spoon until batter is just moistened, batter will be very thick but bakes
up nice and moist, divide evenly between muffin cups and bake for 20-25 minutes,
my batch was abundant so I made an extra little muffin cup from a ramekin to
give to someone special, these were so good with coffee and my family snacked on
them all day, there were a couple left over and hubby took them to work with him
this morning!

I made molasses crumb muffins this morning using a recipe from the King Arthur flour website. Delicious!!
