...Three little words that can bring any Mom or family cook to tears after a loooong day. And sometimes when we're tired, we tend to return to old faithful favorites time and again, only to hear a sigh and a sad "ooookaaaay" from the asking party. I need a little inspiration, and I'm thinking I'm probably not the only one. Let's share favorite dinner recommendations - and even recipes, if you like!

Everything made from scratch, our dinner menus last week were:

Shepherd's Pie
Mock Chicken Parmesan with Pasta
Pierogies with Onions and Peppers
General Tso's Chicken with Vegetables On Rice
My Grandmother's Pot Roast (done with a simple tomato sauce) with Corn Bread
Grinders (subs - hoagies; I know they're called by different names!)
Chicken Pot Pie

This week we're having:

Spanish Lamb (leftover lamb with a spicy tomato and olive sauce served on pasta!)
Chicken Rolled with Garlic Stuffing and Provolone and Broccoli
Stuffed Cabbages
Pizza (design your own!)
Beef Stew
Spaghetti and Meatballs
Roasted Rubbed Chicken with Onions, Yellow Squash and Applesauce

Now, I don't make these every week. In warmer weather, especially, we do lots of creative salads and veggie dishes. But it's cooler now - even was pretty chilly last week - so we're back to more hot, oven-y dinners. Nevertheless, I do make some of them more often than others (primarily because I make double batches and freeze ahead!), and it would be nice to include a little more variety to our dinner menus!

So... what's for dinner over at your place?

Oh Nini, I wish I could plan like you, but I am a total dinner procrastinator.
That said, tonight I made Pioneer Woman's Pot Roast (with our new grass fed beef), mashed potatoes with butter & cream cheese, & fresh tomatoes with a homemade Russian dressing.
I know other gals have raved about PW's pot roast.....Count me in!

As much planning you do dinner doesn't always go as planned, well in our house any way, getting better but still needs tweeking-Sundays the most organized day.
Today we made Atlantic potatoes from this Months Mary Jane and Stuffed pepper cassorole.
Ninibini: never made shepards pie, can I have your recipe.

Hi girls!

I would LOVE the Pioneer Woman's pot roast recipe, too, Lisa - and the Russian Dressing recipe!!! 'Sounds sooo yummy! Oh, and please don't feel bad - you are not alone! I am not able to plan ahead EVERY week! I just happen to be on the ball THIS week! LOL!

Okay, Jessi Lynn... My Grandma's recipe is very simple and will warm you up inside! It's my son's absolutely most favorite meal, and has always been one of mine, too! :)

(1) Prepare about 4 cups (or even a little more!) of mashed potatoes to your liking, set aside.

(2) In a large skillet (I use my grandma's cast iron one for everything! Lucky, lucky me!!!), add one medium chopped onion and 1 - 1 1/2 pounds of crumbled ground beef. Brown the ground beef - the onions will soften. Drain off fat. Season with salt and pepper to taste. (We like a little extra pepper in both our beef mixture AND potatoes.)

(3) If you're using a cast iron skillet, this can be assembled right in the pan, otherwise, use about a 2 quart baking dish. Layer as follows:

- Ground beef and onion mixture on bottom
- Next add (1) 10 oz. package of frozen corn (or canned or fresh is great, too!)
- Add about 1 tablespoon of butter in skinny pats or little dabs all over top of corn
- Pile on mashed potatoes on top of the corn; spread to "seal" edges of pan
- Add about 1 - 2 tablespoons more of butter in skinny pats or little dabs all over top of mashed potatoes.

(4) Bake in a 350 degree oven for about 50 minutes. Potatoes will start to lightly "crust" and brown lightly around the edges when it's done. In our home, my hubby and I LOVE this with a little ketchup on top; our son loves it "plain" - it's all a matter of personal preference! And it's awesome with an iced cold glass of milk on the side!

Nini....Can I come and live with you?

I did an AWESOME Braised Beef tonight with a lot of carmalized onions along with slowly roasted baby carrots and little red boiled potatoes---I cooked the whole thing very slowly and in a huge antique cast iron dutch oven that my husband found at a garage sale many moons ago. That old cast iron pot is the best ever for maintaining a nice even temperature!

Oh Ninibini, yum yum when can I come over lol!

My sister makes chicken and rice almost everyday, and so last night I decieded to make it too. Wow it was so good and easy.
We Had,
Chicken and rice - baked
green beans!

My kids loved it and ate it too.

Here is a link to Pioneer Woman's Pot Roast. Follow instructions & be sure to deglaze pan. It only took about 10 minutes before I put it in the oven, & 3 hrs later it was so delish & falling apart.

My mouth is watering after reading that tutorial on pot roast! Must have homemade bread to accompany ! Yum ! Yesterday hubby and I made good use of the last of the season's tomatoes and canned spaghetti sauce. I had never done it before and it was on my list of farmgirl merit badges. Whew, it was an all-day job and a big mess to clean up after but when I woke up this morning to those beautiful jars of goodness, well, what can I say. If I don't get to do the roast today, it will be pasta with our own wonderful homemade sauce tonight for dinner.

Tonight I'm making the apple-potato recipe in the latest issue of MJF magazine. I drove to an orchard and got lots of apples yesterday so I'll probably be making apple pie later this week. For tonight's recipe I had to substitute pumpkin seeds for pine nuts because the pine nuts were way too expensive. And I plan to make some bread tomorrow cause I got some blackberry spread when I got the apples. Mmm, I'm getting hungry just thinking about it.

We had grilled boneless chicken breasts. Oven roasted potatoes, carrots and onions. Steamed brocolli with freshly grated parmesan.

I second the PW pot roast! We love it. And it's so easy and wonderfully good.

Ya'll are all good cooks. Lots of good things being made here. I made some cube steaks somthered in gravy with mashed potaoes and steamed broccoli. It was very good. We have had a rainy day here and it was the perfect dinner.

Everyone's dinners and cooking sound so good!
I have yet to try Ree's Pot Roast recipe but have made many other recipes from Pioneer Woman with much success and two thumbs up from my honey :)

For dinner last night I made:

~Maple-Curry Pork Roast
~Oven Roasted Root vegetables
~Fresh, steamed green beans

I usually serve this with Homemade Biscuits and Apple Butter but was running short on time.

I want to try a new Apple Pie Recipe I found in an old New England Cookbook. It has Molasses drizzled on the apple mixture and then you top with sharp cheddar and the top crust. Sounds so good!

Me, too, Sharon...the only Pioneer Woman recipe my dh balked at was her meatloaf..."I don't want HER meatloaf, I wand YOUR meatloaf!!!" And I'm thinking, "my meatloaf...you mean the one I just toss whatever I have in, that's never the same, ever?"

Everyone's suppers sound so yummy! I've been out of the cooking mode, sadly since my dh works nights and I have a finicky 19 month old! Sundays and Mondays are my only chance to shine, so I am planning menu's this coming week!

You're all welcome to come for dinner! LOL! Anytime! I am going to definitely try that pot roast - mm! And Sharon - I would REALLY like the recipe for Maple-Curry Pork Roast! I LOVE pork roast! We usually just stud it with slivers of garlic, add some salt, pepper and garlic powder and roast it like that - just like Grandma made! Now, I'm craving it! Maybe Sunday... We also make it with sauerkraut - stud with cloves of garlic, cover with garlic and bake til done. YUM! I never had it like that until my first New Year's Eve in PA - it was HEAVENLY with mashed potatoes... I've mixed my sauerkraut with my mashed potatoes ever since! Oh! And I have to tell you all - I was looking through our bookcase the other day for some homeschool materials and found an old Cast Iron Skillet cookbook! I haven't had a moment to even flip through it, but I am definitely going to do so this weekend! I promise to share anything good I find! :) You all are great cooks, I can see! We are having Porcupine Meatballs, fresh corn, bread and butter pickles
mountain bread bought at the store and left over peach cobbler for dessert. Like I need it!!!!!

We are having tonight Lasagne, salad, garlic bread----brownies with ice cream!!
I my goodness it is 3:00 pm better start putting the Lasagne together now. I want to work in my garden before dark. Never enough day light for me!!! And the time is going to change next month.

Oh my gosh! It has been SO cold here the past few days, and I was thinking this morning how good lasagne would be on a cold, dreary night like we're expecting... Now I have to do it, Dorinda! That sounds SO yummy! Tomorrow night, though... My guys are having dinner down at the Pirates' Fan Field Day event tonight... I'm going to give myself the night off from the kitchen! I think I'm just going to heat some of my home made granola with milk in the microwave and then get to some long overdue crafting projects! :)

Oh no Dorinda, Lasagne!!! Yum Yum Yum! Your meal sounds wonderful! Hmmm, brownies with ice cream. I recently made some Espresso Brownies and they are an experiment my honey deemed a "Keeper"

Tonight we are just having some baked chicken breasts, sweet potato fries with chipotle pepper and tossed salad. Maybe we will have brownies too!

i wanted to share the fun of our last few dinners. night before last i made t bone stk. our steer boiled potatoes our garden butter our cow beets our garden. next night... sausage gravy our onions sausage milk cream yum then homemade long cook creamy fudge from belles cream. yum and we have no heart cholesterol or issues as such here. good clean home grown plain simple foods. tonight meatloaf our meat potatoes and brussel sprouts our garden butter and then apple crisp our butter the farm down the roads free apples no spray or fertilizers i bought the flour and the oats but yum is the word. i have to say lasagna is my very favorite food along with lobster and chocolate. I am a sugar girl it is a part of my daily medical treatment for my dna flaw. funny i have always known even before diagnosis that sugar made me feel better. as a hippie i was trying to be so healthy and sugar free. not . so me and sugar are best of friends. i use some natural but just love sugar. go figure. so tonight apple cobbler. happy days sherrye

Tonight we are going to have buttermilk fried chicken, mashed potatoes, green beans from the garden and maybe some fried green tomatoes from the garden and buttermilk biscuits if I feel inspired. Nothing good for us there!! LOL!!

Yum I love Buttermilk Biscuits. My Grandma taught me how to make them when I was just a youngun. I love them with my homemade peach jam!!

Oh my, Oh my Oh my...

I now know what is for dinner tomorrow night! I am going with ground lamb, venison and beef mixed...cuz that's what we have in the freezer. I am so looking forward to tomorrow's dinner....This is a VERY unusual experience...I usually fly by the seat of my pants at about 3pm....when homeschoolings done, the kitchen calls my name!

I am making slow cooked herbed chicken breasts (second time I have only made chicken and first time in the slow cooker)and as a side dish some couscous (which I will be cooking later once the chicken is almost done). Hope it turns out good! Right now the chicken breasts makes the whole house smell like herbs.
