hard boiled egg..... How do you all boil your eggs? Everyone seems to have a different tactic or tip that makes it work for them.
My issues in general with my eggs: Cracks Greenish yolks Not easy to peal
Just curious......

If the yolks are greenish you are over cooking the eggs. A few will usually crack at least in my experience. Boiling them too hard will also cause cracking. Peeling is affected by the freshness of the egg. If the egg is too fresh it won't peel. I raise my own eggs and they have to be at least two weeks old to peel. I put the eggs in cold water with a little salt and bring them to a boil. Once they boil, turn the heat down to a simmer and cook for 15 min. Remove and drain and fill the pan with cold water so they will quit cooking and let them sit in the cold water until cool. There are lots of methods of hard boiling an egg but this one works the best for me. Hope that helps.

I steam mine. Got the idea from a farmgirl here. I will never go back. I have chickens & fresh eggs are notorious for being hard to peel. Not anymore. I add a couple of inches of water in a pot, add the steamer basket, about 10 eggs, bring to a boil, turn heat to med, & steam for about 8-10 minutes. Let cool (or eat hot) It never fails & I have not wasted any more eggs due to stuck shells. |

I do mine very similar to some of you.
I place eggs in cold water, bring up to a boil. Boil for 3 minutes. Turn the heat off and let sit for 30 minutes. then run cold water on them and voila!
As far as being difficult to peel, I only boil eggs that are at least 4 days old. This works pretty good most of the time.
But I would like to try the steaming method mentioned above.

I use Robin's method, bring to a boil, put the lid on and remove from heat and let sit. Works well every time, I've been doing it this way for years!!

thanks ladies.... i boiled mine for 10 mins this time and then let then sit for about 5... go figure, i posted this as they were cooking. and guess what?! They turned out near perfect!!!! i 'deviled' them an sent them off to the church! :)
