I have received my cookie package, first of all it contained much more than cookies! I also received some hot cocoa, a covered christmas mug, and a giant cookie cookbook! My cookies were peanut butter sandwich cookies and one with chocolate and rolled oats! What a wondeful package to open! |

Since this is a Christmas swap, I think we all should be a bit more giving and patient knowing this is a very busy time for us all. The post can also be quite slow this time of year. My personal swap, Vickie, will not even now be receiving cookies because of my gluten free issues but she is not complaining. However, I intend to send her a gift in thanks for her understanding - even though it will be late and not in time for Christmas.
Anna, I am sure that both of your packages will show up in due time.

Beverly, I got your package today and it is wonderful - you really spoiled me! The cookies are all delish (yes I had to test try one of each right away!!) and the eggnog ones are rather unusual to boot. And I love the box you packaged them in, very festive. Thank you so much!

Connie, I hope you got your cookies, because the ones I have here are starting to go stale. lol. My doctor chewed me out today for gainng weight, said I need to exercise. How can I exercise in this cold? If I try to walk, I nly have a highway and the coal trucks will blow you over and if its hot I can't get out in it. I have a walking dvd that you do in your living room- never been opened--guess this is the time. |

LOL - the eggnog cookies are good, yes (I am nibbling on a couple right now!) but interestingly enough, it is the chocolate chip cookies that I would like to have the recipe for. I usually make the standard toll house variety, but also add a touch of almond extract for that special oomph. But Beverly's are very different in texture, they stay mounded in shape and are more tender/sandy rather than chewy. Not my usual idea of chocolate chip cookies but very, very good!! If you have time at some point I would love that recipe Beverly :) Like, when you are snowed in mid-Jan lol

OK, I'll post the recipes :) but 1st I have to say that I received Catherine's package today! Mmmmmmm....LOVE the Ginger Pennies! What a versitile little cookie! I'm thinking that topping oatmeal, yogurt or ice cream w/ them would be D-lish! The Mexican Wedding cakes are FABULOUS! The funny thing is, I almost made those for YOU! LOL! Thank you so much! I bet none of them last through the night! (posting on our other swap) ;)
The Eggnog cookies would probably be better if I had read the recipe RIGHT! I just noticed, after looking at it to post, I did not use enough butter! The recipe calls for 3/4 C.....I used 3/4 stick! I'm such an AIRHEAD!!
Eggnog Cookies 2 1/4 C flour 1 tsp baking powder 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 1 1/4 C white sugar 3/4 C butter, softened 1/2 C egg nog 1 tsp vanilla 2 large egg yolks
Preheat oven to 300 degerees In a bowl, combine all dry ingredients together In a large bowl, cream together the sugar & butter until it resembles a grainy paste Add eggnog, vanilla and egg yolks and beat at medium speed until smooth Add the flour mixture and beat at low speed until blended. Do not overmix Drop by teaspooons onto an ungreased baking sheet, 1" apart. (I used a small scoop, approx 1 TBSP) Optional: sprinkle nutmeg over the unbaked cookies (I did not do this) Bake for approx. 20 minutes or until bottoms turn a light brown. Transfer from pans immediately to cool.
I did not sprinkle the nutmeg, instead, I drizzled Powdered Sugar glaze over them. The glaze calls for milk, I used eggnog instead.
Eggnog Glaze 1 1/4 C powdered sugar 3 TBSP eggnog (more if needed)
Mix milk into sugar. Add more milk, 1 Tbs at a time, if needed to achieve desired consistency. Drizzle on cookies.
Chocolate Chip Cookies 3/4 stick butter flavor Crisco shortening stick 1 1/4 C firmly packed light brown sugar 2 TBSP milk 1 TBSP vanilla extract 1 large egg 1 3/4 C all purpose flour 1 tsp salt 3/4 tsp baking soda 1 C smei-sweet chocolate chips (I used somewhere from 1/4 - 1/2 C more) 1 C coarsly chopped nuts of choice * (optional) I used plain almonds
Heat oven to 375 degrees Combine shortening, brown sugar, milk & vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Combine flour, salt and baking soda in separate bowl & then mix into shortening mixture until just blended. Stir in chocolate chips & nuts. Drop by rounded TBSP 3" apart onto ungreased baking sheet (I used a medium (approx 2TBSP)scoop) Bake 8-10 minutes for chewy cookies or 11-13 for crisp cookies. Cool 2 minutes on baking sheet then move cookies to cooling rack to cool completely *If nuts are ommited, add an additional 1/2 C chips.

Ooo yummy! I found a recipe in Southern Living for Eggnog Pound Cake this year. I've never used eggnog in recipes before. I love it! I've made the cake four times and shared it with friends - if the cookies are as good as it is, they will not last for long. Thanks, Beverly, for sharing the recipes.

Hi, Brenda! Just wanted to let you know that I received your cookies today! What perfect timing. My brother had just finished eating all the ones that we had and have almost finished all that we brought back from Mom's. I would love to have the recipes for the date(?) bars and the chocolate mint ones. They are really yummy.
And, I love the little snowman notepad and pen and the lavender sachet. Thank you so much!! Hope things are going better for you.

Oleta, I replied to your email, sorry if you didn't get it. Yes I received the cookies and my SIL jumped right in and started eating them. I was in the hospital having a total right knee replacement. They were all gone by the time I got home, so I'm guessing they must have been pretty good. Thanks so much. I'm just glad that they had something to snack on at home. Connie
