so... I was experimenting with dinner night before last. I had some nice sweet potatoes and decided to make them into those potatoes pancakes.... which i have done with regular potatoes before. It didnt turn out good at all. I roasted them in the oven first with onion and garlic... and then [and i think this may have been the mistake]...I pureed them in the food processor with an egg and some flour. And then dropped on a griddle. the consistancy was not right. They were very heavy and dense. Didnt have the flavor of a potatoe cake at all. Zach [my 3 year old] tried a bite of one and said ... "Mommy, this smells funny. Can you take it off my plate?"
haha.... oh well....bake to the drawing board on that!

Well, that's life. Ya learn as ya go. But keep trying. You're bound to get it right. I have never made them with sweet potatoes. I wonder if you should have added some sugar and cinamon. Made them more like a desert pancake. Kids are so funny.

Just mash them don't use the food processor, maybe you overworked the starch. Just guessing.
