Can someone tell me what canning salt really is? Can I just subsitute sea salt (which is the only salt we use) for canning salt in a recipe?

I always use Kosher salt.

It is salt without iodine. It can turn pickles brown.

It is salt with iodine like Amy said but it also does not have a "flowing" agent that table salt has which can separate out and be a white deposit in the bottom of the jar when you can.

Since sea salt isn't iodized and isn't "table salt" it sounds like it would be fine then?

Does canning salt go bad? Someone gave me a big jar of canning salt. I would imagine it's over 10 years old.

I'm pretty sure that salt can't spoil - don't have any data on that but I don't know of a bacteria that could live in a dry salt environment

I never use canning salt, just sea salt, and all of my canning is just fine....canned for 30 some years,....
