I found some amazing pears for a great price and bought a ton...after a few days of pears, I was getting a little tired of them - especially since the family decided that they just weren't in the mood for pears and left me with all of them!!! So I found a recipe in Hobby Farm Home magazine for Pear Butter and thought I'd give it a try. I've never canned anything before and I kind of put it off for a day or two because I was afraid. I don't know what of, exactly, maybe of doing all that work and then having them spoil or something. I don't know. Anyway, I made it last night and used my big brand new canning pot with rack and even though it took me HOURS to make 8 little half pints of pear butter, I have never been more proud! And you should have heard me holler when I heard all those little tops go "ping"!!! The hubby thought I was nuts, but I am still loving my little row of perfect jars! It really wasn't so bad!

Congratulations! I think canning preserves is so much fun. I was just like you, scared when I first started, now I make it and do not think a thing about it. It has become my hobby, and friends and family sort of expect it for gifts, lol. I bet your pear preserves taste great...have you tried them yet?

I had a little extra that didn't fit into the jars and I tried that. I had to make sure it wasn't gross before I gave it out as gifts, right? It was good! I don't know what I'm going to try next. I found a recipe in the book called Small Batch Canning that I found at Costco that I might try. Cranberries, Strawberries and oranges. They call it holiday jelly or something. I thought it might be nice for Christmas gifts. But we are on the tail end of strawberries here, so I don't know. But I'm totally hooked now! I just have to make some room for all the jars I'm going to put up! :)

I agree - it's a beautiful sound. Congratulations on your first canning adventure. I think canning is addictive. My hubby wonders who is going to eat all this jam. I took a class at a university about an hour away from my house to learn how to can (pressure and water bath). After being gone most of the day, I came home with one pint of green beans. I was so proud, I put them on the fireplace mantel and threatened my hubby if he ate them. |

Highlandviewpantry - the recipe was very simple, but kind of long otherwise I would post it here. If you can't find it on-line, you can e-mail me and I'll send it to you. It was basically to cook down the pears, add sugar, cinnamon and orange juice and zest. The cooking was a bit strange and complicated, but not too bad. Just let me know!
