I used to have an old-timey recipe for a Christmas carrot pudding (with raisins, currants, etc) that I have now misplaced. I put in in canning jars and processed it. It sounds odd, but I think it also had shredded potato in it. You generally serve it with a carmel sauce.
Does anyone have a tried and true recipe for this version or something similar? Thanks!
