I will be canning and otherwise preserving apples today. I will be making applesauce, apple pie filling, a fresh apple pie for eating today, and probably dry some apple chips too! The apple tree is shedding apples like there is no tomorrow so it's either now or never!

Well I have 4 quarts of apple pie filling canned and I am getting ready to can some applesauce but Nora came out and fell asleep in my arms. I am thinking of picking more apples for a fresh pie.

Alee, it sounds like you have been busy. Do you have a handy dandy apple peeler/slicer/corer? I love mine. I will be doing this soon too. I have plenty of apple pie filling and apple sauce from last year. So this time I want to dry them with cinnamon and sugar in the dehydrator. I hope you get lots of goodies.

Thanks Kristin- Yes I do have one of those! I wouldn't even think of doing it without one honestly! I went through over 12 lbs of apples today (estimated). And a lot of that was cores. It makes me sad to get rid of them, but I am not sure whate else to do... I have to get rid of all my apple tree waste (trees, fallen apples) etc and not compost it because we have a HUGE infestation of coddling moths and I am trying to not have to spray the tree in the spring. One of the best ways to prevent damage is to get rid of the fallen tress and not provide apple refuse for nesting in over winter.

About half of the apples I used today were rescued from the ground- windfalls. The othe half I did pick from the tree and it was nice to just whip through them without the brusing I must say but at the same time I felt guilty that I hadn't sorted through all of the ones on the ground yet! LOL

Alee, can you take all the peels and cores and give them to the horses? I bet they would love it. My cows are apple hogs and will try to jump the fence to get to me when I am coming to give them some. And the chickens love them too. If you know someone with chickens I'm sure they would like to have them. Just a thought.

Angela, if you were going to be in Sioux Falls SD I'd bring you some. :( We have the first of the early apples coming in. They are my favorite, and we sold out at the market.

Kristin- I wouldn't want to give her just the cores- just like humans- too many apple seeds could make her sick.

You can use organic peels and cores to make jelly. :)
