I just made zuc pickles for the first time... love them! They taste just like bread and butter pickles, you'd never even know they weren't cucumbers!
But I had a question... can you substitute zucs for any pickle recipe? Say, dill or sweet pickles? I got the recipe from a canning book that my MIL had and there weren't any mentions of other zuc pickle recipes or any info on just substituting them...

Elizabeth,
I have used zucchini to make relish before. I substituted the zucchini for the cucumbers in a spicy-hot relish recipe. Not sure about dill or sweet pickles though. I agree about the bread & butter zucchini pickle recipe being great!

I made some bread and butter pickles yesterday and the recipe said squash could be substituted. I got it from one of UW's extension bulletins. They have good ones for pickles an zucchini.

Like Candy did, I usually substitute zucchini for cucumbers in my relish recipe. I actually used cucumbers today in 2 batches because I wanted to use up the end of my cucumber harvest. Really, I think I like it better with the zucchini :)
Relish and bread & butter pickles are the only 2 kinds of pickles that I have substituted zucchini for the cucumbers in.

I'll keep searching for different recipes... I plan on trying the zucs in relish. I'll let you know if I find any other recipes!

Just wanted to let you gals know... I wasn't so thrilled with the dill pickle version. Not horrible, just not as good as I'd hoped. Soon, I'll try the relish and let you know how that turns out!
