Just got the news that our well pump needs replaced. I am going to need to make meals from the pantry until our next payday - two weeks away. Please share your best "from the pantry" menus. Thanks!

I don't have any specific recipes, but when we're in that place we make a lot of soups using up all those dried beans and canned tomatoes. Hope you come up with some tasty creations. You know what they say, necessity is the mother of all invention. Invent something. It might become a family fave.

Pasta: It's not just for red sauce anymore! Make casseroles with canned soups, or make your own "cream of whatever" sauce. Add veggies and go!
Beans: put on a big pot of beans and a little ham/bacon and you're set. Have any cornmeal? Make some cornbread...

I know I always have certain things in my pantry. What do you have in yours and lets create!

We make what I call hamberger helper
boil some macaroni's
brown some beef, either beef or ground beef
add a lg can of tomato sauce
salt and pepper
and cook for about 10-15 minutes

You can also make hamberger stew
brown ground beef
add cans of anything such as
mixed veggies, green beans, corn, beans,
carrots, peas etc.
add a small can of tomato sauce and cover in water
cook for about 15 min
salt and pepper to taste
this goes a long way and it's good!!
goes good with cornbread or any bread or crackers

Today, I will be making a pasta casserole with hamburger from the freezer and a "hambugber helper" in the pantry with a salad from the garden and a pineapple upside down cake. I have rice, some condensed soup and stew meat in the freezer too. I also have cornbread mix, chicken breasts, frozen peaches, frozen pizza, frozen cherries, frozen blueberries, frozen sausage, rice in the cupboard, bakeover mix, chillover mix and lots of condensed soup, peanut butter, sourdough batter, bacon in the freezer, some stuffing bread crumbs, and, of course milk, butter and some homemade yogurt.

We love odd mixtures of flavors like fried potaotes and onions with sausages diced and tossed in for the last few minutes. We also use beans in place of meat in lean times for hamburger helper or cassaroles. We also will eat rice seasoned or with any kind of sauce on it. We like rice even when it's not lean times! We put leftovers on them pretty much no matter what the leftovers! I have even put cans of tomatoes with a sprinkle if galic powder on top over rice and ate it in place of spaghetti.

The key is to look at how much you have of stuff. Whatever you have the most of is your everyday start for the meal. Add in small amounts of the other stuff to change the flavor a little and use meat sparingly almost as a flavoring or side dish. If you have a garden or friends with gardens use that first. I have dug baby potatoes and baby carrots just to get by for a week, then harvest the rest when they're ready. If your friends garden and have extra, take it and start your meal with it.

There's lots of stuff you can do to stretch your budget. Get creative. You'll be fine.

What kind of condensed soups? I have done chicken breasts cut up in chunks with cream of chicken or mushroom & pasta-I call it chicken stroganoff. If you don't have pasta do the same thing with the rice. Do you have beans? You could make a chili with the stew meat or the sausage & top it with cornbread. Do you have eggs? I do a quiche without a crust or fritatta with onions, green peppers, potatoes etc.

I love to "impress" the family with my WHAA LAA'S! That's what we call it around here. Chicken whaa-laa, taco whaa-laa... etc. YOU CAN DO IT! I am sure all of us have a crock pot... I put chicken breast with Cream of Mushroom soup on for a couple of hours serve it over rice. NO KNIFE NEEDED! Also you can make Sheperds Pie... MMM yum that's one of my fav's.

I'm so busy I don't know if I just found a rope or lost my horse!

I am doing the same thing as my work has slowed & we are getting a 1/4 side of beef in Sept. (grass fed) I vow not to grocery shop for at least 2-3 weeks.
Last night was deer tenderloin marinated with Worcestershire, Bragg's Amino's, garlic, & a bit of brown sugar. It was fork tender & delish. Also a pasta salad from acini de pepe pasta, with lemon juice, lemon zest, EVOO, kosher salt, cannellini beans & tomatoes & cucumbers from the weedy garden.
Tonight, pork chops in the crock pot with mushrooms, thin sliced potatoes, broth, garlic mustard, & a dollup of cream cheese, topped with nigella seed(black seed)
Haven't eaten yet, but it smells pretty good.
Tomorrow, pasties of some sort.
