I'm new to preserving, and have A LOT to learn. I use a lot of tomatoes in the winter in soups and chili. Is it better for me to can them or would dehydrating them work as well? Are there certain types of tomatoes that are better to use than others? Any guidance would be appreciated!

I would can them. Now if you have some cherry tomatos, slice them in half and dehydrate. When you rehydrate them they work great on pizzas. Our tomato crop this year is lousey because of the cooler summer that we have had so enjoy those tomatos!

I prefer to dry a lot of our tomatoes. The cherry ones I slice in half and dry for snacks, all the others I slice and dry for chili, pizza, casseroles, soups or whatever. I use my kitchen shears to cut them, and have never had trouble with rehdration.

Knowledge is knowing that a tomato is a fruit.
Wisdom is not putting them in a fruit salad!
