Hey there! I found an interesting way to handle my annual abundance-of-zucchini this year: Zucchini Chips!

Whipped out the dehydrator.
Sliced clean zucchini (both green and yellow) about 1/8" thick.
Lightly sprayed dehydrator shelves with EVOO spray.
Laid out zucchini, edges not quite touching.
Lightly salted with sea salt and garlic powder.
Dehydrated!
Enjoy!!!

Sure does reduce the volume! I guess you can use these in cooking even... the kids and I are enjoying them as snacks!

Mmmmm...great idea! What temp and for how long in the dehydrator?

Gosh I dunno re: temp and time - mine is just one of those On/Off varieties of dehydrators. It does have a forced-air fan so I have found that it dehydrates faster than ones without.

Depending on how thickly I load the trays, the bottom tray seems to be taking about 6 hours, and the subsequent (higher) trays are done within a couple of hours after that. I occasionally slide them around so that the air isn't being consistently blocked. I think it's an inexact science though!!

When they get crisp, they look alot like a potato chip except that the thicker edges will roll in slightly. You could probably do this in the oven on 225 or so also - definitely spraying the pan with EVOO first though!! Boy those suckers will stick if not, sheesh...
