My crock pot/slow cooker bread recipe. I'm making a loaf tomorrow. They come out so moist.
This recipe can be changed as you need to.
Apple Bread
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoons apple pie spice
1/4 teaspoon salt
1/8 cup agave optional
2 tablespoons vege oil or butter
2 eggs
1/2 cup organic sugar-fre applesauce
1/2 cup nuts, optional

Grease a 1 quart round oven safe casserole dish. Set aside.
2. Combine all dry ingredient in med. bowl.
3. Combine wet ingredients and add to center of dry ingredients. Stir until moistened.
4. Pour mixture into dish. Cover tightly with greased foil, greased side in.
5. Place this dish in your slow cooker/crock pot and pour 1 cup warm water in crock pot, around dish.
6. Cover and cook on high for 1 3/4 to 2 hours or until done. Cool 10 minutes and invert on plate.

I made my bread recipe and left out the apple sauce and made it with rosemary and olive oil. Yummy! So easy to do, I'm glad I got back in the habit of making it.

I use a combination for my fish I bake so I wanted to share the recipe for that.
I use it on Haddock and flounder.
Garlic to taste
Mustard
Olive Oil
Dill
Paprika
Lime or Lemon
Coat your dish with olive oil, sprinkle the garlic in the oil add your lemon or lime juice from one whole fruit. Sprinkle the dill and paprika on top of fish and pour the mustard over that and spread evenly. Cover and bake for 25 minutes on 400 degrees or until done.
I start mine on the stove first for 2 minutes then put it in the oven. I have Princess House cookware that is stove to oven safe you remove the handles. It smells great and is yummy.

If you can have dairy, pour caesar salad dressing organic of course over the top with the mustard. Oh my goodness the smell as it's cooking will make everyone hungry!

My Homemade Split Pea Soup Recipe-soon to be famous!!!
Ingredients:organic dry split green or yellow peas
1-organic gluten free chicken broth Pacific brand
organic cumin two shakes
organic garlic
organic turmeric one shake
salt to taste
celery as much as you like
carrots the same
onion
for one bag I use 5 cups of water for two bags I use 8 or to the thickness I want it to be. The more water you add the thinner it gets.
Boil for about 10 minutes stirring regularly. Turn down to simmer and cook for several hours. Stir so it doesn't stick to the bottom of the pot.
For extra yummieness I add organic chicken sausage that I've cooked before I make the soup with water added in the dish then I pour that broth in with the soup.
Delicious!!!! Enjoy!

I have a blog that originally was dedicated to gluten free cooking (I was on a gf diet and now I am off due to other complications). I am a rather creative cook and took my two years on the gf diet very seriously. I didn't blog enough but I can track down more recipes. I found it was easier to take things that we originally ate and just find ways to make them gluten free instead of trying to find all new ideas.

That is what I do. I just alter recipes to be gluten free and other restrictions I have. Works great.

I made some stuffing for Christmas with GF bread. It was nice as stuffing is one of my favorite parts of the meal!

What I made the family for tonights dinner!

My Potato and Sausage Soup Recipe

5 lb bag of organic potatoes
organic sausage of your choice
Watkins organic garlic powder to taste
Watkin organic onion powder to taste
Organic chicken broth-homemade or boxed
Organic half-n-half or milk
1 cup water
Watkins organic rosemary 1 tsp.

Cook the sausage in a baking dish covered with water in a 375 degree oven until done. This reduces the fat off the meat and it will float in the water. Keep adding water as needed to keep the fat off. Drain off water when done.

Cook potatoes, drain. In a large stock pot add chicken broth and spices. Mash potatoes with added milk and butter, salt to taste.

Add potatoes and sausage to chicken broth and bring to low boil. Simmer on low stirring to keep from burning for 30 minutes. Yum!

We used to make our own nachos with meat and cheese just like you would a taco only just put all the stuff on the chips and heat up for a few minutes in the oven to melt the cheese. But, can't eat corn or tomato anymore so I make it for the DH and DD. They love it.

Last night I made some scones and they came out great. Moist and not so crumbly as you buy. I used a GF flour mix and almond flour. !/2 of each for the recipe and applesauce. THey were wonderful. The new hubby is encouraging me to try whatever I can and is even willing to be my guinea pig. He's not GF, just me, but he liked the flavor and texture of the scones.

Laurie, those scones sound really nice. I cook/bake gluten free for my gd who lives with us when not in college. Texture is her biggest aversion. So, I will try your version. Thanks for sharing.

Our Easter dinner was completely gluten free. No one complained.

Marjean, I will try your scones also. I'll have to get the millet flour.

Here's teh recipe

1 1/2 cup almond flour
1 1/2 cup GF flour mix
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
1/4 cup oil
3 tbl honey
3 eggs
1/2 cup applesauce
dried cranberries. mix dry together. blend wet together. fold wet into dry and add cranberries. bake at 350 15-20 minutes. let cool a bit.

I have had so many diet changes since I got the Lyme and Celiac's that I wanted to share them with you here in hopes it might help others with food allergies and restrictions like mine.

I found out that all of my food allergies and gluten intolerance is from kidney issues. You may not even know that because unless your doctor is like mine and has spent his life to researching what causes all our health ailments they only treat the symptoms.

So, the moral of this story is do a kidney and liver cleans annually from the health food store and with your doctor's approval.

After, being on natural products to clean my kidneys for the last four months, I now can eat red meat again, soy, corn, rice in moderation. Slowly adding them in my diet once every 7 to 10 days. My kidneys no longer ache when I eat red meat.

There is also a new blood type diet that my doctor has me on for Type O. It is not the D'Adamo diet and I do not know what doctor he got it from, but will find out and let you know.

I have also gotten type 2 diabetes because of the kidney problem. Thankfully, it is only temp. whew!
I just have to watch my carb intake with a protein and fat and that keeps it stable.

I don't eat sugar or fruit yet of any kind.

I am thin and always have been, but my doctor says I will gain back to a normal weight by the time he has me all put back to normal!!!! Yay!

I eat meat and vegetable for breakfast. Beans and gluten free grain for lunch. If I have beans, vege. I add a meat. I do not mix grains with meat. Then dinner is meat and vegetable.

The only starchy veges I eat are sweet potato, yucca, red skin potato and broccoli. I eat a good fat like sesame butter when I eat the rice or buckwheat hot cereals.

He says I can try dairy again if I can find raw organic only!

I eat organic everything! Lamb, biscon, fish, turkey, chicken and beef. Only white fish, no fatty ones for my Type O diet.

I hope that helps you all. And, I only drink reverse osmosis water! No other beverages at this time.

He says water content plays a part in the body healing as well. He also recommends a water from Europe called Volvic. I have not tried it yet. Waiting until I am really feeling better.

No spices, only herbs. A little garlic. No citrus except lemon.
