Thanks Jonni for the hints. The consistency was a little thinner than commercial grade, but I didn't worry too much. THis year, I'll try your way.

Congrats Laurie! I had this bookmarked to try this summer. I think I'll make it today! To create a thinner consistency could you mash the peaches with a potato masher?

Made up a double batch. Amazing. So yummy. Got it all canned up this morning. I found sticking it in the oven on the lowest setting for a couple of hours last night while we went to pick up the youngest at the airport was just enough to get it nice and thick with out standing there stirring.

Thank you for the recipe. Can't wait to open back up a jar and use it!

So I'm supposed to be packing to head off to work, but nope. The BF had extra peaches from the market and I am making BBQ sauce. I did forget the "thin" commercial sauce, so it does not thicken as much unless you cook it down a while. I love this recipe. Last year I didn't do any of the pepper, this year I am adding just touch for that added hot and loving it. One batch canned, one to go. Then back to the packing...
