Last year I picked blueberries and put two gallons in the freezer (i did not wash them first). however, every time i used them in a recipe they seemed bitter. Is this normal? They were super sweet fresh. I just picked a gallon today and am getting ready to freeze them and wondered if the bitter thing is normal. Thanks!

I've frozen blueberries and they haven't turned out bitter so I don't think that's a normal thing. You said you didn't wash them, could they have been sprayed with some chemical that could have affected it? Sorry I can't be of more help. At least you can hide bitter berries in a smoothie :-)

I freeze mine like that too. I know they have not been sprayed at all. And we eat them frozen. My grands eat them like candy. And they have never said they were bitter. That's strange that yours are now after not being bitter when they were frozen. I hope someone else has an answer for you.

I freeze mine, too and have had no trouble with them. The only thing I can think of is maybe they thawed and unthawed with the freezer door being opened and closed. That happened to some cantaloupe I froze once, but it was also discolored. Hope you find an answer:)

I too,have never had a problem with mine, but I wash them first. The only thing I can think of is most sweet berries have a small amount of natural yeast on them. Look at grapes, the yeast is very evident. Maybe somehow that yeast started to ferment the sugar in the berries making them turn a little to vinegar. How long after they were picked did they go in the freezer? What type of container are you using to store them? Was it new or used? Try again and see if it was just a fluke.

hmmm, haven't ran across that either. Your sure they were really really ripe? All i could think of was maybe they were slightly under ripe and they turned bitter once frozen. Better luck this year!

I always wash mine first and have never had them turn bitter. Not sure what happened on you.

Thanks ladies. I think I am going to wash them this year. As for last year, I picked them and then froze them immediately. Also, they were very ripe and very delicious! I don't know if they had been sprayed. That is something to ponder. Also, I used new freezer bags. Hmmm...

I use glass to freeze in. A large mouth quart jar works wonders and they stack. I'm trying to use less plastic. Since you freeze the blueberries first it doesn't cause a headache. I learned the hard way when I freeze soup to leave plenty of head room!
