Sign me up with another sugar free partner, I use agave too, and I do use a little sugar but not much if thats ok with my partner, otherwise will make with no sugar at all. I just picked up a half bushel of peaches, my blackberry-mango preserves has a little sugar in it-but only used enough over the berries to make its own juice. I can in 1/2 pints

I'd like to sign up for one - I made and sold chokecherry preserves last year and they were a big hit. Can anyone stand some chokecherry jam??

I have never had a chokecherry, need to see if they grow wild here in Missouri.
I am making up a sugar free jam with lots of different fruits-plums, blueberries, pineapple, apple, and peaches-(the pineapple was what I had left over from canning up a couple of pineapples into pint jars) the peaches I picked up are ripening now, so will also cut up for a sugar free peach jam. using agave to make the juice.
I like to let the cut up fruit set over night to make its own juice and then tomorrow I will make these up

Out of curiosity, has anyone made elderberry jam? I swear my gran made some when I was a kid, but my mom doesn't have the recipe...she also says my brain was over-active as a kid and I made stuff up lol.

I think that chokeberry is similar to chokecherry - both are small, "cherry-like" in shape and structure (with a pit) - very sour!! unless you sweeten it of course... they grow wild all over the Rockies - probably other places too?

TJ, I bet your Mom is a lovely lady. My dad's name was Delza so they played with it and came up with Delicia. I love that it is different. Thanks for the info on the chokeberry I have never heard of them before but, will look and see if I can find some. delicia |

Hi, What is agave and where do you get it? Is it ok for diabetics? I have only used Splenda in my sugar free jams. Would love to try something new. I haven't signed up for this swap , not sure if I will have the time, but love to read them and learn!

Hi Barbara,
Any health food store should carry Agave Nectar. They usually have both amber (in color) and dark. I have even seen Agave nectar at other grocery stores like Wal-Mart and Krogers, usually by the honeys and syrups :)

yes, Sharon is right-I can buy it at one of our wal marts here, and when I was up in Indiana in amish country-I bought a bottle of blue agave in one of their packaged food stores-just read the lable and make sure it is pure agave and no added corn syrup

Count me in girls! I am going all sorts of berry picking tomorrow and so this swap is perfect timing. My mother in law loves blackcaps...she is from West Virginia...and so I will be making some blackcap rasberry jam and several others. Count me in for three!

I took ideas from several different sugar free, pectin free recipes. I let the cut up fruit sit in a covered bowl over night in the fridge that I drizzled with agave and lemon juice. I had the feeling to put butter like for apple pie, but I didn't. Then one recipe I found said to do that.lol I sterilized everything and cooked it on a low boiling that wouldn't stop when stired until the fruit thickened in it's own juice. I didn't add any extra water. It tasted so good, I hope my partner likes it as much as I do. I don't have a sweet tooth and don't eat commercial sugar or any kind of sugar so my taste buds are not polluted.lol That's what I tell all my friends that can eat sugar. It's our little joke since they sympathise with me and my crazy health problems. When I took the jars out of the water bath the lids popped the minute I sat them on the towel to cool. That made me even more happy!
