I need some suggestions on how to make a substitution for cream of anything (chicken, mushroom, etc.) I have a few recipes that I love but refuse to use that canned stuff and know there must be some easy way to make something that is similar! Any suggestions?

I have a recipe at home for cream of _______ soups. I googled for it, but sad to say I have not tried it yet.

Oh I am so glad someone has recipes! I am eager to make my own cream of whatever soup! ;D I despise the canned stuff but my husband loves it.

I make my own cream of ____ soups and always just start with a basic roux. Not sure if that's the "official way" but I've never had anyone complain. Flour, butter, stock and whole milk. Add your stuff.

I would do it Jonni's way but I call it white sauce. I think that is basically a recipe I received in an extension service newsletter once.

Here is the recipe I have for it.

2 cups instant milk
3/4 cup cornstarch
1/4 cup instant chicken bouillon
1 tsp. onion powder
1/2 tsp. dried thyme
1/2. dried basil
1/4 tsp. pepper

Combine and store in an airtight container.

To Use: Combine 1/3 cup mix and 1 1/2 cup water. Bring to a boil while stirring often. Adda vegetable for more flavor, such as diced celery (optional). Can be used for any recipe calling for crem of ---- soup.

I am so glad you asked this question, as I now feel the same way you do about using those canned soaps! I used to use them in the past but it's been a while. However, I have some nice older recipes that use the canned soups. Tweaked with a homemade version, they are worth revisiting.

One of my favorite columns was in Cooking Light magazine years ago. They would take all those crazy recipes from the PTA and churches, etc. that called for all that processed crap (green bean casserole anyone? what about Watergate salad?) and update them with fresher ingredients, lowering the fat and sugar and generally making them healthier. Haven't read those in a while so I don't know if they still do that, but some of those recipes are great when made from scratch. Good flavor is what made them popular to begin with, but healthier versions are just better! And when you are eating healthier, those heavier originals just don't taste good anymore.

I just make a nice thick roux also and use a good strong homemade stock for flavor. I think you're really just looking for the texture of a canned soup in most canned soup recipes....

Oh my! My husband and I were just looking for a replacement for cream of _____ soup. I love my old recipes for hearty casseroles but don't want to make them anymore. We are trying to eat organic. Thanks so much for the recipe!

Jonni,
I just have to thank you once more, I made my soup and it turned out great!
Here's what I did:
3 Tbsp organic butter
3 Tbsp organic flour
1 1/2c organic cream
1 c organic chicken broth

It was perfect and so nice that it didn't have any MSG, GMOs or hydrogentaed oils!!

I'm so glad, Heather! It's really a great way to conserve what you have, too...when we're snowed in or whatever, I just whip up a batch of homemade cream of ____ soup! And what's even more wonderful, is that if you know how to make a good roux, you can make anything, now :)
