how do I go about changing the quote (or signature) in my posts?

Go to your profile, sign in and on the page that comes up there is a box on the bottom right side that says optional text. Go into that box and change what you want your quote to be and then type in those silly numbers and letters at the bottom and it will change it. It is really easy.
