I apologize if this has already been addressed.

I have several egg casserole dishes that require frozen hashbrowns. Now that we have an abundance of eggs again, I would like to use fresh grown potatoes in place of frozen hashbrowns. Do I boil the potatoes and dice them first, then bake the casserole? Or can I just dice and bake as is? I'd love to hear your thoughts and experiences with this.

I like to par boil the shredded hashbrowns and the lay them on a cookie sheet on parchment paper and stick them in the deep freeze after I have drained them good in a salad spinner.

I would precook the potatoes first because if you have to wait for them to be cooked then your eggs will be way overcooked! (experience speaks volumes) (mening I have made that mistake!)
